YUMMY SEAFOOD PASTA SALAD

Yummy Seafood Pasta Salad image

This is sort of a concoction from several recipes I use, super easy and based off the recipe my mother made for us as kids. Pretty kid friendly, at least in our house, and is always great leftover. Can substitute cooked shrimp to cut down on prep time. Can be served warm or chilled, but we prefer it warm.

Steps:

  • Bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain pasta well.
  • Combine pasta, kale, carrots, cherry tomatoes, olives, cucumber, bell pepper, and shallot in a bowl. Stir together Greek dressing and mayo in a bowl and drizzle over salad. Mix until well combined.

Tips:

  • Use a variety of seafood. This will add flavor and texture to your salad. Some good options include shrimp, crab, lobster, and scallops.
  • Cook the seafood properly. Overcooked seafood is tough and chewy, so be careful not to overcook it. Shrimp should be cooked until it is pink and opaque, crab should be cooked until it is red and flaky, lobster should be cooked until it is bright red, and scallops should be cooked until they are opaque and slightly firm.
  • Choose the right pasta. A short pasta, such as penne or rotini, is a good choice for seafood pasta salad. These pastas will hold the sauce and seafood well.
  • Make a flavorful dressing. A simple vinaigrette is a good dressing for seafood pasta salad. You can also use a creamy dressing, such as a mayonnaise-based dressing or a yogurt-based dressing.
  • Add some vegetables. Vegetables will add color and nutrients to your salad. Some good options include cherry tomatoes, bell peppers, cucumbers, and zucchini.
  • Serve the salad chilled. Seafood pasta salad is best served chilled. This will help the flavors to meld and the salad will be more refreshing.

Conclusion:

Seafood pasta salad is a delicious and easy-to-make dish that is perfect for a summer meal. With a variety of seafood, vegetables, and dressing options, there are endless possibilities for creating a seafood pasta salad that everyone will enjoy. So next time you're looking for a light and refreshing meal, give seafood pasta salad a try. You won't be disappointed!
