HEARTY LENTIL SOUP WITH SPINACH - VEGETARIAN VERSION

Hearty Lentil Soup With Spinach - Vegetarian Version image

I usually make this with bacon, but I can't eat meat on my current restricted diet, so I've tossed that smoky slab and added some other stuff! I've also almost doubled the original amounts of original recipe - I can't make small batches of soup! I pack it up in plastic containers and take them to work. *Please note that preparation time may vary. I'm a slow chopper and I accounted for that in the given time below!

Categories     Soup/Stew     Tomato     Vegetable     Quick & Easy     High Fiber     Spinach     Lentil     Fall     Bon Appétit

Yield Serves 6

Number Of Ingredients 9

5 cups (about) canned beef broth
1 cup lentils
2 tablespoons olive oil
1 large onion, chopped
1 small green bell pepper, chopped
1 celery stalk, chopped
1 8-ounce can tomato sauce
1/4 cup purchased salsa
1 10-ounce package frozen chopped spinach, thawed, drained

Steps:

  • Bring 4 cups broth and lentils to boil in large saucepan. Simmer until lentils are just tender, about 30 minutes.
  • Meanwhile, heat olive, oil in heavy large skillet over medium-high heat. Add onion, bell pepper and celery and sauté until tender, about 10 minutes.
  • Add onion mixture to lentils. Stir in tomato sauce and salsa. Simmer over medium-low heat until lentils are very tender, about 30 minutes. Thin soup with additional broth if necessary. Stir in spinach and simmer until heated through, about 2 minutes. Season soup to taste with salt and pepper.

Tips:

  • Use fresh or frozen spinach: Fresh spinach will give the soup a more vibrant color, but frozen spinach is a great option if you don't have fresh on hand. Just be sure to thaw it before adding it to the soup.
  • Don't overcook the lentils: Lentils should be cooked until they are tender but still hold their shape. Overcooked lentils will become mushy and lose their flavor.
  • Add vegetables that you like: This recipe is a great base for adding other vegetables that you enjoy. Some good options include carrots, celery, zucchini, or bell peppers.
  • Season the soup to taste: Use salt, pepper, and other spices to taste. You can also add a squeeze of lemon juice or a dollop of yogurt for extra flavor.
  • Serve the soup with a side of bread or crackers: This will help to soak up the delicious broth.

Conclusion:

This easy spinach lentil soup is a delicious and healthy meal that is perfect for a quick lunch or dinner. It is also a great way to use up leftover lentils or spinach. With its simple ingredients and easy preparation, this soup is sure to become a favorite in your home.
