- In a large heavy bottomed saucepan, combine the butter, sugar and salt. Cook over medium heat, stirring until the butter is melted. Allow to come to a boil, and cook until the mixture becomes a dark amber color, and the temperature has reached 285 degrees F (137 degrees C). Stir occasionally.
- While the toffee is cooking, cover a large baking sheet with aluminum foil or parchment paper.
- As soon as the toffee reaches the proper temperature, pour it out onto the prepared baking sheet. Sprinkle the chocolate over the top, and let it set for a minute or two to soften. Spread the chocolate into a thin even layer once it is melted. Sprinkle the nuts over the chocolate, and press in slightly. Putting a plastic bag over your hand will minimize the mess.

- Arrange saltines right side up in a single layer in pan.

EASY ENGLISH TOFFEE LOOKS LIKE ALMOND ROCA
Steps:
- 1. To get started grease or spray a pan. Using parchment paper you spray or butter it.
- 2. Pour butter into a heavy saucepan and add sugar.
- 3. When butter is melted the sugar starts to turn colors. From light tan to brown. When the toffee is brown your candy thermometer should read 290 degrees. Take off heat. The recipe says 300 degrees, but I have found that 300 degrees is to hot. It turns the toffee burnt and bitter.
- 4. Pour the toffee into the pan. It's very hot, so be very careful. Let cool.
- 5. When the chocolate is cooled add your dark or milk chocolate chips it melts faster. Your candy thermometer should read 88 degrees. Spread on top of toffee with a cake spatula. When the chocolate is still hot add your chopped pecans or walnuts.
- 6. This is a picture of the toffee when you are finished. If you want both sides with chocolate and nuts these are the steps. This is what they do with Almond Roco. Cut the toffee into squares when cooled. Dip both sides into melted chocolate and the nuts.
- 7. If you want it just like the photo double the toffee recipe. That pic has thick toffee in the center.

- Preheat oven to 375°F and butter a 1 1/2-quart capacity baking dish (I used a combo of Pam and butter and it worked fine).
- Combine the sugar with the flour in a large bowl.
- Pour the milk into a measuring cup, beat in the egg, vanilla and melted buter and then pour this mixture over the sugar and flour, stirring--just with a wooden spoon--to combine.
- Fold in the dates then scrape into the prepared baking dish.
- *Don't worry if it doesn't look very full: it will do by the time it cooks*.
- Sprinkle the sugar for the sauce over the batter and dot with the butter.
- Pour the boiling water over the whole thing (yes, really!) and transfer to the oven.
- Set timer for 45 minutes, though you might find the dessert needs 5 or 10 minutes more (this was a frustrating part, for whatever reason I ended up having to put it back in for almost 20 minutes-- but then it was very cake-like, Remember that it thickens up when you take it out).
- The top of the dessert should be springy and spongy when it's cooked; underneath, the butter, dark brown sugar and boiling water will have turned into a rich, sticky sauce.
- Serve with vanilla ice cream, creme fraiche or heavy or light cream as you wish.

- 1. Line cookie sheet with HEAVY DUTY foil, smear butter all over. Sprinkle with 1 cup chopped almonds.
- 2. Put 1 lb. unsalted butter in pan, melt on medium heat. Don't burn. When butter is just about melted add 2 cups sugar, 1 teaspoon salt, 3/4 cup corn syrup, 1/2 cup water. Stir. Turn up to medium/high heat, attach candy thermometer and cook until it reaches 305 degrees. This step should take approximately 20 minutes. You can give it an occasional stir.
- 3. When temperature reaches 305, turn off stove, add the 1 teaspoon vanilla and carefully pour hot liquid over nuts, covering evenly. Wait 3-5 minutes and then pour the chocolate chips on the top, evenly. Let sit and melt for 3-5 minutes. Smooth out chocolate. Add your 2nd cup of chopped almonds now and sprinkle on the top of the chocolate.
- 4. It usually takes 2-3 hours for the candy to set up. At that point you can break it into pieces and put in your containers.
