1/2 cup sugar
2 large egg yolks
1 teaspoon vanilla extract
1-1/2 cups all-purpose flour
1/4 teaspoon salt

2 large egg whites
1 cup finely chopped walnuts
FILLING:
1/4 cup butter, softened
1/4 teaspoon rum extract
1 cup confectioners' sugar
1 to 2 teaspoons 2% milk
1 to 2 drops yellow food coloring, optional
Additional ground nutmeg

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Beat in egg yolks and vanilla. In another bowl, whisk flour, salt and nutmeg; gradually beat into creamed mixture. Refrigerate, covered, 1 hour or until firm enough to handle., Preheat oven to 350°. Shape dough into 1-in. balls. In a shallow bowl, whisk egg whites until foamy. Place walnuts in a separate shallow bowl. Dip balls in egg whites; roll in walnuts., Place 2 in. apart on greased baking sheets. Press a 1/2-in.-deep indentation in center of each with your thumb. Bake 10-12 minutes or until center is set. Carefully remove from pans to wire racks to cool completely., For filling, in a small bowl, beat butter and extract until creamy. Beat in confectioners' sugar alternately with enough milk to reach spreading consistency. If desired, beat in food coloring. Fill each cookie with 1/2 teaspoon filling. ½ cup white sugar
¼ cup packed brown sugar
1 egg
½ teaspoon vanilla extract

1/4 tsp McCormick® Nutmeg, Ground
3/4 cup (1 1/2 sticks) butter slightly softened
1/2 cup granulated sugar
1 whole egg plus 1 egg yolk
1 tsp McCormick® Pure Vanilla Extract
1 3/4 cups finely chopped walnuts divided
1 egg white lightly beaten
6 tbsps butter softened
1 1/2 cups confectioners' sugar
1 tbsp milk
1/4 tsp McCormick® Rum Extract
1/8 tsp McCormick® Nutmeg, Ground

Steps:

  • For the Cookies, mix flour and nutmeg in medium bowl. Set aside. Beat 3/4 cup butter and granulated sugar in large bowl with electric mixer on medium speed until light and fluffy. Add whole egg, egg yolk and vanilla; mix well. Gradually beat in flour mixture on low speed until well mixed. Stir in 1/2 cup of the nuts. Refrigerate 30 minutes or until dough is easy to handle.

1/2 cup sugar
2 eggs, separated
1 teaspoon vanilla
1 1/2 cups flour
1/4 teaspoon salt
1/8 teaspoon nutmeg
1 cup finely chopped walnuts
1/4 cup butter, softened
1 cup confectioners' sugar
1/4 teaspoon rum extract
1 -2 teaspoon milk
1 -2 drop yellow food coloring (optional)

Steps:

  • In a large bowl, cream butter & sugar until light & fluffy. Add egg yolks and vanilla. Stir in flour, salt & nutmeg until combined. Cover & chill dough for approximately 1 hour or until firm & easy to handle.
