ENDIVE SALAD WITH BLUE CHEESE DRESSING
I modeled this salad after one of my own great secret weaknesses: iceberg lettuce with blue cheese dressing. The big difference here, of course, is that endive has much more flavor than iceberg, which has more texture than flavor. The bitter edge of the endive is soothed by the sharp blue cheese dressing, and the combination is set off by the small apple dice that garnishes the wedges.

Tips:
- Choose fresh and crisp endive and lettuce: The fresher the greens, the better the salad will taste. Look for leaves that are brightly colored and free of blemishes.
- Wash the greens thoroughly: Rinse the endive and lettuce under cold water to remove any dirt or debris. Drain the greens well before adding them to the salad.
- Use a sharp knife to slice the endive: A sharp knife will help you get clean, even slices of endive. Cut the endive into thin strips or wedges, depending on your preference.
- Tear the lettuce into bite-sized pieces: Tearing the lettuce will help to create a more rustic and flavorful salad. If you prefer a more uniform look, you can use a knife to cut the lettuce into strips.
- Toast the walnuts: Toasting the walnuts will help to bring out their flavor and add a nutty crunch to the salad. Toast the walnuts in a dry skillet over medium heat until they are fragrant and slightly browned.
- Make the pepper dressing ahead of time: The pepper dressing can be made ahead of time and stored in the refrigerator for up to 3 days. This will save you time when you're ready to assemble the salad.
