An overnight brownie recipe that is worth the wait. These brownies are dense and fudgy. More of an adult taste, these treats are not very sweet and make a great pairing with a good cup of coffee.

6 large eggs, room temperature
18 ounces semisweet chocolate, chopped
1 cup unsalted butter
2 teaspoons pure vanilla extract
1 teaspoon ground cinnamon
1/4 cup heavy cream
4 ounces dark chocolate, chopped

Steps:

  • Preheat oven to 425 degrees F.
  • Prepare a 9-inch square baking pan by lining it with foil and spraying the foil with nonstick cooking spray or brushing it with vegetable oil.
  • Melt the semisweet chocolate and the butter in a double boiler (a pan set over a hot water bath); stir until smooth.
  • Add vanilla and cinnamon; stir thoroughly to combine.
  • Remove mixture from the heat and cool to room temperature.
  • In the bowl of your stand mixer, beat the eggs on high speed until very frothy and about triple in volume (approximately 5 minutes).
  • Fold half of the beaten eggs into the chocolate mixture and combine.

  • After 10 minutes, remove the brownies pan from the larger water bath pan and place it on a wire rack to cool while making the glaze.
  • To make the glaze, heat the cream and the dark chocolate in a double boiler over simmering water.
  • Stir until the chocolate is melted and the mixture is smooth.
  • Pour the hot glaze over the brownies and smooth it out with a spatula.
  • Set the pan aside to cool completely.
  • When cool, cover the pan with plastic wrap and refrigerate overnight.
  • Cut chilled brownie into 12 squares.
  • Brownies taste best when allowed to come to room temperature for 30 minutes before serving.

"FABULOUS" BROWNIES



This recipe came from the back of a Nestle cocoa can. I've been making these for years, and they're always a hit. The batter is pretty thick, which makes them very fudgy. The original recipe included frosting, but I think it makes them too rich. If you have a strong sweet tooth, you might like them with the frosting. The frosting recipe is posted separately. Enjoy!

3/4 cup butter or 3/4 cup margarine, softened
2 tablespoons water
2 eggs
2 teaspoons vanilla
1 1/3 cups flour
3/4 cup cocoa
1/2 teaspoon baking powder

3/4 cup nuts (optional)

Steps:

  • Preheat oven to 350 degrees.
  • Grease a 9x13 pan.

1 lb semi-sweet hershey's chocolate chips
12 MORE ounces semi-sweet hershey's chocolate chips
6 ounces unsweetened chocolate
6 extra large eggs
3 Tablespoons instant coffee granules
2 Tablespoons pure vanilla extract
2 1/4 cups sugar
1 1/4 cups all purpose flour
1 Tablespoon baking powder
1 teaspoon salt
3 cups chopped walnuts

Steps:

  • Preheat oven to 350. butter and flour a 12 x 18 x 1-inch jelly roll pan. Melt together the butter, 1 lb chocolate chips and unsweetened chocolate in a medium bowl over simmering water. Allow to cool slightly. In a bowl, stir (do not beat) together the eggs, coffee granules, vanilla, and sugar. Stir the warm chocolate mixture into the egg mixture and allow to cool to room temp. In a medium bowl, sift together 1 cup flour, the baking powder, and salt. Add to the cooled chocolate mixture. Toss the walnuts and 12 ounces of chocolate chips in a medium bowl with the 1/4 cup flour, then add them to the chocolate batter. Pour into the pan. Bake for 20 min, then rap the sides to release air. Bake another 15 min or until a toothpick comes out clean. Do not over bake. Allow to cool, then refrigerate.
