SIMPLY FANTASTIC RHUBARB CUSTARD PIE
There are several rhubarb custard pies on Zaar but I didn't find any quite like this one. It came from a friend at work and was tried and approved by another co-worker before I finally tried it last night. I think the topping really finishes it off. NOTE: I substituted Splenda for the sugar in the filling and it absolutely could not be detected. (I would have done the same with the topping but DH made the topping for me while I was making the filling.)

- Mix cornstarch, sugar, salt with the cold milk in a large saucepan.
- Cook mixture over medium heat to dissolve. (Stir constantly) until boiling.
- Pour 1/4 of the mixture into the beaten eggs and blend thoroughly.

- Add 1 smashed banana to mixture and stir until blended .

I also made this recipe, using orange concentrate and grated orange zest on top, it was also fantastic. Although, you will need to freeze this overnight, it is the fastest dessert you will ever make. For a vegan version, use soy or almond milk to brush pie. Oh, and the secret? Almond extract!

- Preheat oven to 425.
- Mix cherries, sugar, and almond extract in saucepan, and bring to a simmer. Pour or scoop out 1/2 cup cherry juice, and add cornsarch. Mix well until a paste forms. You may wish to add 1/4 to 1/2 cup of water to turn it into a liquid rather than a paste. Slowly add to the simmering cherries, mixing well while adding. Allow to simmer until thickened. Set aside.
- For pie crust, mix flour and salt; cut in shortening, using pastry blender or two knives. You want to stop when you have large pea size clumps of shortening - any smaller, and you'll lose out on some flakiness! Add in ice water (I actually add ice to my water to ensure it's super cold), and mix, drawing a fork up from the bottom of the bowl, adding water until the dough is moist enough that it sticks together when pressed. TIP: Don't touch the pastry dough any more than absolutely necessary! Separate into two balls, one slightly larger than the other. Roll out larger ball on a floured board, and place into pie pan; it should overlap. Roughly cut edge even with edges. Roll out smaller ball of dough, and set aside.
- Pour filling into pie crust; top with remaining pastry dough, allowing it to overhang edges. Again, roughly cut crust, slightly larger than edge of pie pan. Tuck top crust under bottom crust (to prevent leaks), and crimp. Cut vents into top crust, and if you have any scraps left over, shape into a few flat cherries with stems, and place on top of pie.
- Lightly brush top of pie with milk, and sprinkle with sugar.
- Bake at 425 for 15 minutes, then reduce heat to 350 and bake for 30 minutes more.

- Preheat the oven to 450 degrees. Put the potatoes into a pan of salted, boiling water. Bring back to the boil for 10 minutes. At the same time, hard boil the 2 eggs. Steam the spinach in a colander over the pan that has the potatoes. This will only take about a minute. When the spinach is done, remove from the colander and squeeze out excess water. Remove the eggs from pan. Cool under cold water and peel and quarter them. Put to one side. Drain the potatoes in the colander. In a separate pan, slow-fry the onions and carrots in a little olive oil for about 8-10 minutes. Add the cream and bring just to a boil. Remove from the heat and add the Cheddar cheese, lemon juice, and mustard. Put the spinach, fish and eggs in an decent sized casserole dish with a lid and mix together. Pour over this mixture the creamy vegetable sauce. Mash the cooked potatoes - adding a bit of olive oil, salt and pepper. Spread the potatoes on top of the fish. Place in the oven for 25 - 30 minutes. Bake at 450 degrees. I served this fish pie with a loaf of fresh Italian bread and a homemade Cheddar cheese soup found on this site.
