SIMPLY FANTASTIC RHUBARB CUSTARD PIE

Simply Fantastic Rhubarb Custard Pie image

There are several rhubarb custard pies on Zaar but I didn't find any quite like this one. It came from a friend at work and was tried and approved by another co-worker before I finally tried it last night. I think the topping really finishes it off. NOTE: I substituted Splenda for the sugar in the filling and it absolutely could not be detected. (I would have done the same with the topping but DH made the topping for me while I was making the filling.)

FANTASTIC FROZEN LIME PIE DESSERT

Fantastic Frozen Lime Pie Dessert image

A co-worker shared his mother's recipe. The sky is the limit because all the employees made this recipe using different flavored concentrates. I also made this recipe, using orange concentrate and grated orange zest on top, it was also fantastic. Although, you will need to freeze this overnight, it is the fastest dessert you will ever make. It makes two pies and you will be glad you have two because the first one will be gone in no time.

MOM'S FANTASTIC CHERRY PIE

Mom's Fantastic Cherry Pie image

Mom's well known for her cherry pie. Years ago, she told me not to tell the secret... but I know the secret's out, so here it is! The beautiful thing is that it has only four ingredients - plus the pastry, of course. Mom's cherry pie puts any boughten cherry pie to shame - you won't be able to even look at one again! For a vegan version, use soy or almond milk to brush pie. Oh, and the secret? Almond extract!

Provided by Katzen

Categories     Fruit

Time 1h15m

Yield 1 Pie, 8-12 serving(s)

Number Of Ingredients 10

4 cups sour cherries, with juice
1 cup sugar
1 teaspoon almond extract
5 tablespoons cornstarch, heaping
2 cups flour
1 teaspoon salt
3/4 cup vegetable shortening, well-chilled
4 -8 tablespoons water, ice cold
2 tablespoons milk
1 tablespoon sugar

Steps:

  • Preheat oven to 425.
  • Mix cherries, sugar, and almond extract in saucepan, and bring to a simmer. Pour or scoop out 1/2 cup cherry juice, and add cornsarch. Mix well until a paste forms. You may wish to add 1/4 to 1/2 cup of water to turn it into a liquid rather than a paste. Slowly add to the simmering cherries, mixing well while adding. Allow to simmer until thickened. Set aside.
  • For pie crust, mix flour and salt; cut in shortening, using pastry blender or two knives. You want to stop when you have large pea size clumps of shortening - any smaller, and you'll lose out on some flakiness! Add in ice water (I actually add ice to my water to ensure it's super cold), and mix, drawing a fork up from the bottom of the bowl, adding water until the dough is moist enough that it sticks together when pressed. TIP: Don't touch the pastry dough any more than absolutely necessary! Separate into two balls, one slightly larger than the other. Roll out larger ball on a floured board, and place into pie pan; it should overlap. Roughly cut edge even with edges. Roll out smaller ball of dough, and set aside.
  • Pour filling into pie crust; top with remaining pastry dough, allowing it to overhang edges. Again, roughly cut crust, slightly larger than edge of pie pan. Tuck top crust under bottom crust (to prevent leaks), and crimp. Cut vents into top crust, and if you have any scraps left over, shape into a few flat cherries with stems, and place on top of pie.
  • Lightly brush top of pie with milk, and sprinkle with sugar.
  • Bake at 425 for 15 minutes, then reduce heat to 350 and bake for 30 minutes more.
  • Enjoy!

FANTASTIC FISH PIE

FANTASTIC FISH PIE image

Categories     Fish

Yield 6

Number Of Ingredients 12

5 large potatoes, peeled and diced
2 eggs
2 large handfuls of fresh spinach
1 onion, finely chopped
1 carrot, halved and finely chopped
1 little extra-virgin olive oil
1 1/4 cups of heavy cream
2 good handfuls of grated cheddar cheese
juice of 1 lemon
1 heaped tsp English mustard or French will do
1 pound haddock, cod or other white fish, skinned, boned and sliced into strips
salt and pepper

Steps:

  • Preheat the oven to 450 degrees. Put the potatoes into a pan of salted, boiling water. Bring back to the boil for 10 minutes. At the same time, hard boil the 2 eggs. Steam the spinach in a colander over the pan that has the potatoes. This will only take about a minute. When the spinach is done, remove from the colander and squeeze out excess water. Remove the eggs from pan. Cool under cold water and peel and quarter them. Put to one side. Drain the potatoes in the colander. In a separate pan, slow-fry the onions and carrots in a little olive oil for about 8-10 minutes. Add the cream and bring just to a boil. Remove from the heat and add the Cheddar cheese, lemon juice, and mustard. Put the spinach, fish and eggs in an decent sized casserole dish with a lid and mix together. Pour over this mixture the creamy vegetable sauce. Mash the cooked potatoes - adding a bit of olive oil, salt and pepper. Spread the potatoes on top of the fish. Place in the oven for 25 - 30 minutes. Bake at 450 degrees. I served this fish pie with a loaf of fresh Italian bread and a homemade Cheddar cheese soup found on this site.

Tips:

  • Choose the Right Apples: Select firm, tart apples like Granny Smith, Honeycrisp, or Braeburn for a classic apple pie. For a sweeter pie, use a blend of tart and sweet apples, such as Pink Lady or Fuji.
  • Prepare Your Apples Properly: Peel, core, and slice your apples evenly to ensure even cooking. To prevent the apples from browning, toss them with a mixture of lemon juice, water, and a pinch of salt.
  • Use a Quality Pie Crust: Whether you're making your own pie crust or using a store-bought one, make sure it's well-chilled before rolling it out. This will help prevent the crust from shrinking or tearing.
  • Don't Overwork the Dough: When rolling out the pie crust, use a light touch and avoid overworking the dough. Overworking can make the crust tough and difficult to work with.
  • Chill the Pie Before Baking: Once you've assembled the pie, chill it for at least 30 minutes before baking. This will help the crust and filling set properly.
  • Bake the Pie at a High Temperature: Start by baking the pie at a high temperature (425°F) for 15-20 minutes. This will help create a golden brown crust. Then, reduce the temperature to 350°F and continue baking until the filling is bubbling and the crust is cooked through.
  • Let the Pie Cool Before Serving: Once the pie is baked, let it cool for at least 15 minutes before serving. This will allow the filling to set and the flavors to meld together.

Conclusion:

With careful preparation, attention to detail, and a little patience, you can create delicious and impressive homemade pies. Experiment with different fillings, crusts, and techniques to find your perfect pie recipe. Whether you're a seasoned baker or just starting out, the world of pies offers endless possibilities for creativity and enjoyment.
