ITALIAN FARRO WITH SAUSAGE AND APPLES

Italian Farro with Sausage and Apples image

Notes: Farro, a wheatlike grain, makes a delicious alternative to cracked wheat, rice, and similar side-dish carbs with meats, poultry, and fish. Cooked with sausage, then mixed with diced apples for a sweet crunch, farro makes a savory side dish for roast chicken.

Provided by wp

Yield Makes about 6 cups; 4 to 6 side-dish servings

Number Of Ingredients 8

1 cup hulled whole-grain farro
3/4 cup bulk pork sausage (about 3 oz.) or pork sausages, casings removed
Butter or olive oil (if needed)
2 1/2 cups fat-skimmed chicken broth
1 cup finely chopped parsley
1 Fuji apple (8 oz.)
2 tablespoons lemon juice
Salt and pepper

Steps:

  • Sort farro, discarding strawlike bits of hulls and other debris. Pour farro into a bowl, cover completely with cool water, stir, and skim off and discard any additional hulls that float to the surface. Drain farro.
  • In a 5- to 6-quart pan over high heat, crumble sausage with a spoon and stir often until browned, about 5 minutes. Spoon out and discard all but 1 tablespoon fat or, if necessary, add butter to equal 1 tablespoon fat in pan. Add farro to sausage in pan and stir until grains are dried, about 2 minutes.
  • Add broth and bring to a boil, then reduce heat, cover pan, and simmer (mixture foams, so check and stir occasionally to keep it from boiling over) until farro is tender to bite and no longer tastes starchy, about 25 minutes. Stir in parsley, cover, remove from heat, and let stand 10 minutes.
  • Meanwhile, peel and core apple; cut into about 1/4-inch dice and mix with lemon juice. Stir into farro, season to taste with salt and pepper, and pour into a bowl.

1 Tbsp. extra-virgin olive oil, plus more for drizzling
4 fully cooked spicy Italian sausage links (about 12 oz.), sliced crosswise into 1/3"-thick rounds
1 large bunch scallions (about 10)
1/4 cup dry white wine

4 sprigs thyme
Thinly sliced radishes, peperoncini, and lemon wedges (for serving)

  • Choose the right farro: There are three main types of farro: semi-pearled, pearled, and whole. Semi-pearled farro has been partially hulled, which gives it a shorter cooking time and a chewier texture. Pearled farro has been hulled and polished, which gives it a shorter cooking time and a softer texture. Whole farro has not been hulled or polished, which gives it a longer cooking time and a nuttier flavor.
  • Soak the farro: Soaking the farro before cooking helps to reduce the cooking time and makes the farro more digestible. You can soak the farro in cold water for 30 minutes or overnight.
  • Use a flavorful broth: The broth that you use to cook the farro will add a lot of flavor to the dish. Use a broth that is flavorful and that complements the other ingredients in the dish.

  • Season to taste: Season the farro with salt, pepper, and other herbs and spices to taste. You can also add a squeeze of lemon juice or a dollop of yogurt to brighten up the flavors.

Conclusion:

Farro is a delicious and versatile grain that can be used in a variety of dishes. It is a good source of fiber, protein, and iron. Farro is also a good source of prebiotics, which are beneficial for gut health. With its nutty flavor and chewy texture, farro is a great addition to any meal.
