Steps:
- Rinse and sort beans.
- Soak beans in the 6 cups water for 24 hours. Do not discard this water.
- Bring to a strong simmer. cover and continue strong simmer for 2 to 2 1/2 hours or until beans are tender.
- Add salt at this point only. Never before or while cooking. Remove epazote and discard. Keep all cooking liquid.
- Blend with food processor or stick blender if you are truly cool. I like to leave some chunks for texture. I also recommend using all of the cooking liquid. This is where the flavour lives. The beans may initially be quite thin but will thicken up.

Tips:
- Choose dried beans that are plump and free of wrinkles or blemishes. If you are using canned beans, rinse them thoroughly before using.
- Soak the beans overnight in a large bowl of water. This will help to soften the beans and reduce the cooking time.
- If you are using a slow cooker, add the beans, water, and spices to the slow cooker and cook on low for 8-10 hours or on high for 4-5 hours.
- If you are using a pressure cooker, add the beans, water, and spices to the pressure cooker and cook on high pressure for 15 minutes. Then, let the pressure release naturally.
- Once the beans are cooked, mash them with a potato masher or a fork until they reach the desired consistency.
- Add your favorite seasonings and spices to taste.
