1 cup fine fresh breadcrumbs (from 6 slices firm white bread; see Cooks' Note below)
1/3 cup whole milk
1 medium onion, coarsely chopped
1 celery stalk, coarsely chopped
4 garlic cloves
2 tablespoons neutral vegetable oil, such as grapeseed
2 1/4 teaspoons kosher salt, divided
1 1/2 teaspoons freshly ground black pepper, divided
3 tablespoons Worcestershire sauce
1 1/2 pounds ground beef chuck, preferably 20% fat
1/2 pound ground pork
2 large eggs
1/2 cup ketchup, divided, plus more for serving

Steps:

  • Position rack in center of oven; preheat to 350°F. Line a rimmed baking sheet or 13x9" shallow baking dish with foil. Soak breadcrumbs in milk in a large bowl until ready to use.
  • Pulse onion, celery, and garlic in a food processor until finely chopped. (Alternatively, you can finely chop by hand.)
  • Heat oil in a large skillet over medium. Add onion mixture, 1 tsp. salt, and 1/2 tsp. pepper. Cook, stirring occasionally, until softened, 5-7 minutes. Remove from heat, stir in Worcestershire, and scrape into bowl with breadcrumb mixture. Add beef, pork, eggs, 1/4 cup ketchup, and remaining 1 1/4 tsp. salt and 1 tsp. pepper, then mix with your hands to combine.
  • Form meatloaf mixture into a long, well-packed, approximately 5"-wide loaf shape on prepared baking sheet. Brush top of loaf with 1/4 cup ketchup. Bake meatloaf until an instant-read thermometer inserted into the center registers 155°F, 60-75 minutes. Let rest 15 minutes before slicing. Serve with more ketchup alongside.

2 slices day old white bread, torn into small pieces or 1/2 cup plain breadcrumbs, preferably homemade
1 yellow onion, finely chopped (3/4 cup)
1 medium carrot, finely chopped (3/4 cup)
1 rib celery, finely chopped (1/2 cup)
2 tablespoons extra-virgin olive oil
2 tablespoons chopped fresh thyme
3 tablespoons Worcestershire sauce
1/4 cup low-sodium chicken broth
3/4 cup ketchup
2 pounds 85% lean ground chuck
1 large egg, lightly beaten
1 tablespoon light brown sugar

Steps:

  • Preheat oven to 350 degrees. Tear bread into pieces; pulse in a food processor to make fine crumbs (or use plain breadcrumbs) set aside.
  • Cook the Vegetables:Pulse vegetables in food processor until finely chopped (or do so by hand). Heat olive oil in a large skillet over medium-high. Add vegetables, thyme, and 1 teaspoon kosher salt to skillet; cook, stirring occasionally, until vegetables have softened, about 8 minutes. Stir in Worcestershire sauce, broth, and 1/4 cup ketchup. Remove from heat; let cool completely.
  • Prep the Meat and Glaze: In a small bowl, stir together remaining 1/2 cup ketchup and the brown sugar for glaze; set aside. In a large bowl, combine vegetable mixture with ground chuck, egg, 1/2 cup breadcrumbs, 2 teaspoons salt, and 1/2 teaspoon freshly ground pepper. Mix with your hands until well combined.
  • Bake and Let Cool:On a rimmed baking sheet, form meat mixture into a loaf that's 10 inches long, 4 inches wide, and 2 inches high, packing firmly to prevent cracking. Coat top and sides with glaze. Bake until top is caramelized and a thermometer inserted into thickest part registers 165 degrees, 55 to 65 minutes. (If top is browning too quickly, tent with foil.) 2 lbs 85% lean ground beef (do not use leanest ground beef or meatloaf will be crumbly, about 12-16% fat is ideal)
2 large eggs
1/2 cup finely chopped onion
1/4 cup finely diced celery
2 -3 slices firm bread (slightly stale, the drier the better)
1 -2 teaspoon salt (to taste, I leave out)
1 teaspoon Coleman's dry mustard
1/4 cup milk
1/4 cup ketchup
additional ketchup, if desired (to accompany)

Steps:

  • An hour or so before preparation, remove beef from fridge and allow to come to room temperature.
  • Preheat oven to 400* F. Grease a standard sized loaf pan and set aside.
  • In blender, process bread into fairly fine crumbs--you need about 1 1/2 cups of crumbs.
  • In a large mixing bowl, beat eggs slightly with a fork. Add hamburger, breaking into large pieces as you do so. Mix slightly with a wooden spoon or paddle.
  • Add remaining ingredients and mix well with spoon or paddle. When fairly well incorporated, finish mixing by hand until you have a relatively homogeneous mixture. Don't handle too much or meatloaf will be tough.
  • Place meat mixture into loaf pan, pressing down as you do so to eliminate air pockets. Press down and flatten top. Meatloaf may have overflow of grease while cooking, so place on a baking sheet if desired to simplify cleanup.
  • Bake at 400* F for 50 minutes or until juices are clear and meat thermometer registers about 160-170* F.
  • Remove from oven, allow to rest for 5-10 minutes, and drain juices. Carefully invert onto serving platter. Serve sliced, with ketchup if desired.

So I have a new item on my stockpile list: Crushed Pineapple. That way, I can make this any time I want. Because I will be making it often. I'm always trying out new recipes and mix-n-match concepts with the food that I have on hand and what's on sale at the grocery store. We have a very small "regular rotation" of recipes because of this...but this meatloaf is being added to the regular rotation. I'm so glad that I doubled this recipe...I doubled it so that I could make a regular loaf pan of meatloaf, and muffin tin meatloaves as well. Huge. Huge. Huge hit! The leftovers went into the freezer and made for quick and easy lunches. Below you'll find the doubled recipe...cut it all in half if you just wish to make 1 meal's worth. (But I highly recommend making extra to freeze!) (NOTE: I tagged this recipe as Gluten Free...just sub the regular bread crumbs for gluten free bread crumbs.)

2 -3 lbs lean ground beef, about 7%
2 cups corn flakes, crushed lightly

1 cup tomato sauce or 1 cup left over spaghetti sauce

A healthy version of meatloaf that does not sacrifice the taste for a healthy alternative! Leftovers are great on onion rolls with lettuce and tomato for a great sandwich treat. Your can use either Creole or Cajun seasoning. I've been making this for years, and I can't remember where I got it. Sometimes, I put slices of pancetta (or bacon) on the outside. Of course, it isn't as healthy - but it sure is pretty and tastes great.

1 1/2 lbs ground turkey
1 large onion, chopped
3 large garlic cloves, chopped
1/2 cup fresh breadcrumb
1/2 cup chopped fresh parsley
2 tablespoons creole seasoning
1 egg white, whisked
2 teaspoons ground cumin
1 teaspoon dried thyme, crumbled
2 tablespoons spicy mustard

Steps:

  • Preheat over to 350 degrees F.
  • Combine first 9 ingredients in large bowl. Season with salt (remember that the creole or cajun seasoning can be salty) and pepper. Place turkey mixture in 9x5-inch nonstick loaf pan. Cover and bake 20 minutes. Remove from oven, and spread top with mustard. Bank uncovered another 35 minutes. Let stand 10 minutes. Remove from pan and cut into slices.

1 c whole milk
6 slice white bread
2 lb ground beef
1 c parmesan cheese, freshly grated, heaping
1/4 tsp seasoned salt
3/4 tsp salt
freshly ground black pepper
1/3 c flat leafed parsley, minced
4 whole eggs, beaten
10 slice thin, regular bacon
SAUCE
1 1/2 c ketchup
1/3 c brown sugar
1 tsp dry mustard
tabasco, to taste

Steps:

  • 1. Preheat oven to 350 degrees. Pour milk over the bread slices. Allow it to soak in for several minutes.
  • 2. Place the ground beef, milk-soaked bread, Parmesan, seasoned salt, salt, black pepper, and parsley in a large mixing bowl. Pour in beaten eggs.
  • 3. With clean hands, mix the ingredients until well combined. Form the mixture into a loaf shape on a broiler pan, which will allow the fat to drain. (Line the bottom of the pan with foil to avoid a big mess!)
  • 4. Lay bacon slices over the top, tucking them underneath the meatloaf.
  • 5. Make the sauce: add ketchup, brown sugar, mustard, and hot sauce in a mixing bowl. Stir together. Pour 1/3 of the mixture over the top of the bacon. Spread with a spoon.
  • 6. Bake for 45 minutes, then pour another 1/3 of the sauce over the top. Bake for another 15 minutes. Slice and serve with remaining sauce. Serve with mashed potatoes. My mouth is so watering right now. **It's the sauce folks!

The whole family has always loved this recipe from the 60's. Leftovers make great cold or warm sandwichs. My daughter always said make a recipe the first time as is then add your own tweeks later if need be. So try to use all the ingredients. :)

2 lb ground beef low fat
1 c saltine crumbs (processed in food processor)
1 1/4 c milk
1 egg - beaten
1/4 c finely chopped onion
1 Tbsp worcestershire sauce
1 1/2 tsp soy sauce, low sodium
1/2 tsp dry mustard
1/4 tsp fresh ground pepper
2 clove garlic, pressed

Steps:

  • 1. Mix all ingredients together then add the meat and mixing lightly (so you don't toughen it). You can shape into a loaf on a cookie sheet (with sides) lined with parchment paper. Cook uncovered at 350º for 1 hour if using (cookie sheet) or so. For the last ½ hour of cooking slather on Ketchup which thickens during cooking time and tastes great

1 1/2 lb ground beef
1 1/2 lb ground pork
1 egg
1 egg white
2 clove minced garlic
1/3 c italian bread crumbs
Couple dash(es) worcestershire sauce
1/4 tsp garlic powder
1/4 tsp dried oregano
3 Tbsp parmesan cheese
FILLING
1/2 c shredded mozzerella cheese
1 spanish onion (julienned)

Steps:

  • 1. Julienne the Spanish onion. and Sautee' in 1T of Butter and 2t Sugar until Golden brown and Caramelized. Set aside to cool
  • 2. In a Large Mixing bowl, Combine Beef, Pork, Egg & Egg white, Garlic, bread crumbs, Worcestershire sauce, Garlic Powder, Oregano, and Parmesan. Mix to combine thoroughly. But do not Compact (Leaves for a denser, Brick like meatloaf)
  • 3. Take 1/2 of the Meatloaf Mixture and lightly pack into your meatloaf pan (or Freeform on a sheet Tray)
  • 4. On top of that, Place your Cooled Caramelized onions in a line, Running Horizontal down your meatloaf. Top with Cheese to Cover.
  • 5. Place the remaining Meatloaf mixture on top (Making sure not to compact the filling down too much)
  • 6. Place in a 400 degree oven for 45 Minutes, or untill Internal Temperature is 160 degrees. Allow to cool for at least 10 Minutes and Serve

1 lb ground beef
1/2 tsp salt
1 medium onion, chopped
1 medium bell pepper, red or green, chopped
1 c grated cheddar cheese
2 Tbsp worcestershire sauce
1/2 c sour cream
1 tsp lawry's seasoned salt
1 egg, beaten
1 c ritz crackers, crushed
2 slices white bread

Steps:

  • 1. Pre-heat oven to 350 degrees.
  • 2. Mix all ingredients together, except for bread. Shape into loaf. Line a 1 and 1/2 qt loaf pan with the bread slices. Place meatloaf on top. *The bread soaks up grease, and should be thrown away after the meatloaf is done.
  • 3. Bake for 45 to 60 minutes, until meat is cooked through.

Tips:
