2 cups fresh cranberries
1 (15 ounce) can mandarin oranges, drained and chopped
1 cup pecans
1 (15 ounce) can crushed pineapple, drained
2 (3 ounce) packages cranberry-flavored gelatin mix (such as Jell-O®)
¾ cup white sugar
1 cup boiling water
1 cup cold water

Steps:

  • Place cranberries, mandarin oranges, and pecans into a food processor and pulse several times to chop; process mixture until finely ground, about 30 seconds. Transfer mixture into a large bowl.
  • Mix pineapple, gelatin, sugar, boiling water, and cold water together in a separate bowl until gelatin and sugar have dissolved. Pour gelatin mixture into cranberry mixture and stir. Pour into a gelatin mold and refrigerate 8 hours or overnight before serving.

1 can (20 oz.) crushed pineapple in juice, undrained
2 pkg. (3 oz. each) JELL-O Strawberry Flavor Gelatin
1 can (16 oz.) whole berry cranberry sauce
1 fresh pear, chopped
2/3 cup chopped walnuts

Steps:

  • Drain pineapple, reserving juice. Remove 1 Tbsp. pineapple; set aside. Add enough cold water to reserved pineapple juice to measure 3 cups; pour into saucepan. Bring to boil. Add to dry gelatin mixes in medium bowl; stir 2 min. until completely dissolved. Stir in cranberry sauce.
  • Refrigerate 1-1/2 hours or until slightly thickened.
  • Stir in pears, nuts and remaining pineapple. Refrigerate 4 hours or until firm.
  • Top with reserved pineapple just before serving.

1 (20-ounce) can crushed pineapple in juice, undrained
2 small (3-ounce) packages cherry or raspberry Jell-O gelatin (SF works too)
1 (14 to 16-ounce) can whole berry cranberry sauce
1 large pear (or apple), peeled and diced small (I used an anjou pear)
1/2 cup walnuts or pecans, chopped (optional)
1 1/2 to 2 cups Cool Whip for topping

Steps:

  • Drain pineapple well (squeeze or press out all the juice), reserving the juice in a 4-cup glass measuring cup or bowl. Add enough water to the juice to measure 3 cups. Microwave the juice until it comes to a boil. Add dry gelatin mixes to a medium mixing bowl; whisk in the boiling juice mixture until completely dissolved, 2 minutes. Add the cranberry sauce and stir until dissolved. Refrigerate 1-1/2 hours or until thick but not congealed. Stir in drained pineapple, pears, and nuts, if using. Pour into an 11x7-inch glass dish (or similar). Refrigerate at least 4 hours or until firmly congealed. Spread Cool Whip over the top right before serving time, or cut into individual squares and top each with a small dollop.

1 can (14 ounces) sweetened condensed milk
1/4 cup lemon juice
1 can (20 ounces) crushed pineapple, drained
1 can (14 ounces) whole-berry cranberry sauce
2 cups miniature marshmallows
1/2 cup chopped pecans
Red food coloring, optional
1 carton (8 ounces) frozen whipped topping, thawed

Steps:

  • In a bowl, combine milk and lemon juice; mix well. Stir in pineapple, cranberry sauce, marshmallows, pecans and food coloring if desired. Fold in whipped topping. Spoon into a 13-in. x 9-in. baking dish. Freeze until firm, 4 hours or overnight. Cut into squares.

1 (20 ounce) can dole crushed pineapple, undrained
1 (6 ounce) package jell-o brand raspberry gelatin powder
1 (16 ounce) can whole berry cranberry sauce
1 medium dole apple, chopped
2/3 cup chopped walnuts

Steps:

  • Drain pineapple, reserving liquid in 1-quart liquid measuring cup. Remove 1 tablespoons of the crushed pineapple, set aside for garnish. Add enough cold water to the reserved liquid to measure 3 cups; pour into large saucepan. Bring to boil; remove from heat. Add gelatin; stir at least 2 minute until completely dissolved. Add cranberry sauce; stir (gelatin mixture should be thick. Pour into large bowl.
  • Refrigerate 1-1/2 hours or until slightly thickened (consistency of unbeaten egg whites).
  • Stir in remaining pineapple, apples and walnuts; stir gently. Pour into medium serving bowl.
  • Refrigerate 4 hours or until firm. Top with reserved crushed pineapple just before serving. Store leftover gelatin in refrigerator.
  • Cooking time would actually be refrigeration time.

1 can (20 oz) crushed pineapple, undrained
2 packages (3 oz) or 1 package (6 ounce) raspberry flavored gelatin
1 can (14 oz) whole berry cranberry sauce
1 medium apple chopped (Any will do. We like honey crisp.)
2/3 cup chopped walnuts (optional - tastes great if you choose to use them)

Steps:

  • Open can of pineapple and drain pineapple, reserving juice. Pour juice into a 4 cup liquid measuring dish.
  • Remove 1 Tablespoon of the crushed pineapple and set aside for garnish {if desired}
  • Add enough cold water to pineapple juice until it measure 3 cups; pour int a large saucepan.
  • Bring juice to a boil then remove from heat immediately.
  • Add gelatin. Whisk mixture at least 2 minutes until completely dissolved.
  • Add cranberry sauce and stir. {Gelatin mixture should be thick}.
  • Pour mixture into a large bowl. Refrigerate 15 - 30 minutes or until slightly thickened.
  • Remove from fridge and stir in pineapple, apples and walnuts; stir gently.
  • Pour into a medium serving bowl. & refrigerate for 4 hours or until completely firm.
  • Top with reserved crushed pineapple just before serving.
  • Store leftover gelatin in refrigerator.

3 cups fresh cranberries
2 cups water
2 cups white sugar
1 (6 ounce) package cherry-flavored gelatin (such as Jell-O®)
2 cups crushed pineapple
2 cups diced pears
1 cup pecans, or more to taste

Steps:

  • Combine cranberries, water, and sugar in a saucepan and bring to a boil. Cook until berries are splitting open and tender, about 10 minutes.
  • While cranberries cook, pour cherry-flavored gelatin mix into a casserole dish.
  • Pour cooked cranberry mixture over gelatin in the casserole dish and stir to dissolve and mix evenly. Place in the refrigerator until gelatin is set, about 1 hour.
  • Add pineapple, pears, and pecans. Stir and serve.
