Categories     Cheese

Time 10m

Yield 1 jar

Number Of Ingredients 6

7 ounces feta cheese
3 -5 sprigs fresh rosemary
12 -15 black olives
1 teaspoon black peppercorns
1 small dried red chili pepper, optional
1 cup virgin olive oil, approx

Steps:

  • Dry the cheese with paper kitchen towel, cut into 1-inch cubes.
  • Add to a jar, alternating with the other ingredients.
  • Fill the jar with the olive oil, seal and leave for one week in a cool dark place so the flavors have time to develop.
  • After opening keep the feta in the fridge.

Tips:

  • Choose the right olives: Kalamata, Nicoise, and Castelvetrano olives are all good choices for this recipe. Kalamata is a brine-cured black olive with a distinct wrinkled texture and rich, buttery flavor, adding a classic Mediterranean touch to the jar. Nicoise olives are plump and briny green olives with a slightly nutty flavor, providing a briny contrast to the feta. Castelvetrano olives are Sicilian green olives known for their delicate, fruity flavor and mild bitterness, adding a subtle complexity to the mix.
  • Marinate the olives: Marinating the olives in a mixture of olive oil, herbs, and spices before adding them to the jar helps infuse them with extra flavor. You can use a simple marinade of olive oil, garlic, and oregano, or experiment with different herbs and spices like rosemary, thyme, or chili flakes to create a unique flavor profile.
  • Choose a good quality feta cheese: Use a firm and flavorful feta cheese for the best results. A creamy or crumbly feta may not hold its shape as well in the jar. Look for a feta cheese that is made from sheep's milk or a blend of sheep's and goat's milk for a richer, tangier flavor.
  • Layer the ingredients carefully: Layer the olives, feta cheese, and herbs in the jar in a visually appealing way. Alternate layers of olives and feta cheese, and sprinkle herbs in between to add color and flavor. You can also add a layer of roasted red peppers or sun-dried tomatoes for extra depth of flavor.
  • Pack the jar tightly: Pack the jar tightly with the olives, feta cheese, and herbs to prevent air pockets. This will help preserve the ingredients and prevent spoilage. You can use a spoon or a muddler to gently press down on the ingredients as you add them to the jar.
  • Store the jar properly: Store the jar in a cool, dark place, such as a pantry or refrigerator. The jarred feta and olives can be stored for up to 2 weeks in the refrigerator. Bring them to room temperature before serving for the best flavor.

Conclusion:

Creating a jar of marinated feta and olives is a simple yet delicious way to preserve and enjoy these Mediterranean flavors. With a variety of olives, herbs, and spices to choose from, you can easily customize the recipe to suit your taste. Whether served as an appetizer, part of a mezze platter, or used as a flavorful addition to salads and pasta dishes, this jarred feta and olives will add a touch of Mediterranean sunshine to any meal. So next time you're looking for a quick and easy way to elevate your culinary creations, give this recipe a try and experience the magic of marinated feta and olives.
