2 tablespoons extra-virgin olive oil
1 teaspoon kosher salt, plus extra for seasoning
1/4 teaspoon freshly ground black pepper, plus extra for seasoning
1/4 packed cup fresh flat-leaf parsley leaves
Serving suggestion: serve on grilled bread, in endive leaves or as a dip for crudite.

Steps:

  • In a food processor, combine the ricotta cheese, olives, pine nuts, olive oil, 1 teaspoon salt and 1/4 teaspoon pepper. Pulse until smooth. Add the parsley and pulse until combined. Season with salt and pepper.
  • Cook's Note: To toast the pine nuts, arrange in a single layer on a baking sheet. Bake in a preheated 350 degrees F oven for 6 to 7 minutes until lightly toasted. Cool completely before using.

There are serving suggestions for a salad comprising a thinly sliced raw fennel, rocket, orange and roasted almonds, but obviously you can serve this with a salad of your choice. My preference would be to serve it with a potato salad and salad greens. the preparation and cooking times below do not include the 5 minutes resting time after the pork rolls have finished cooking.

550 g pork fillets (just over 171/2 ounces) or 550 g pork schnitzels (just over 171/2 ounces)
1 cup fresh breadcrumb
1/2 cup parmesan cheese, freshly grated
1/4 cup fresh herbs, a mixture of basil, oregano, marjoram, thyme, mint or 1/4 cup flat leaf parsley
3 garlic cloves, minced
1 lemon, finely grated zest only
1/4 cup pine nuts, toasted roughly chopped
2 tablespoons olive oil
sea salt, to taste
fresh ground black pepper, to taste
kitchen string, for assembling
2 teaspoons Dijon mustard
100 g firm feta (approximately 31/2 ounces)

Steps:

  • Cut the pork in 2 cm/3/4 inch slices, place cut side down between 2 sheets of plastic wrap and gently pound to 1/2cm/1/4 inch thick slices; you will have about 8 slices.
  • STUFFING: Combine the breadcrumbs, Parmesan cheese, selected herbs, lemon zest, garlic and pine nuts in a bowl; add the olive oil and stir with a forkuntil they are well-combined and season to taste with the salt and pepper.

1 (10 ounce) bag fresh spinach
1 cup feta cheese
½ cup pine nuts
2 fresh pasta sheets
1 egg
1 tablespoon water

  • Heat the olive oil in a large skillet over medium-high heat. Cook the spinach until fully wilted, about 2 minutes. Let cool, then squeeze the spinach to remove as much liquid as you can.
  • Combine the cooked spinach, feta, and pine nuts in a blender or food processor and pulse until it is the consistency of a fine paste. Beat the egg and water together in a small bowl.

a little plain flour , for dusting
500g pack puff pastry
2 tbsp onion chutney
2 tbsp harissa
½ butternut squash , peeled, deseeded and very thinly sliced
200g pack feta cheese , crumbled
1 tbsp pine nut
small bunch mint , leaves picked
large handful rocket leaves

Steps:

  • Heat oven to 180C/160C fan/gas 4. Put a large baking tray on the middle shelf to heat up. On a floured surface, roll out the pastry to a 30cm square. Trim the edges, lightly score a 1cm border around the edge of the tart, and prick the centre all over with a fork. Transfer the pastry base to a sheet of baking parchment.
  • Mix the chutney and harissa, and spread over the middle of the pastry. Arrange the squash in one layer over the top, then season. Put the tart on the hot baking tray and bake for 30 mins.
  • Remove the tart, scatter over the feta and pine nuts, and bake for 20 mins more. Scatter over the mint and rocket to serve.
