4 chicken breast (frozen or raw)
1 packet Fiesta Ranch dip (by the salad dressing)
1 can black beans (drained and rinsed)
1 can Rotel
1 can corn not drained
1 block cream cheese

Steps:

  • Cook on high in the slow cooker for 4 hours or 6 on low. Shred the chicken with a hand mixer. Trust me, it's so much easier to do it with the hand mixer!

2 lbs boneless skinless chicken thighs (6-8)
1 (12 ounce) jar medium salsa (I will use hot)
1 (10 ounce) can tomato soup (good brand)
1 (1 ounce) package taco seasoning (regular)
1 (14 ounce) can corn
1 (8 ounce) container sour cream (optional)

Steps:

  • Pour tomato soup in bottom of crockpot.
  • Place chicken pieces on top of soup.
  • Sprinkle chicken pieces with taco seasoning.
  • Pour salsa on top of chicken.
  • Cover and cook for 8-10 hours.
  • 30 minutes before serving, shred chicken and mix well.
  • Serve with tossed salad, on floured tortilla if desired and top with sour cream and/or shredded cheese.

I came up with this when I couldn't decide between chicken cacciatore or something more Tex-Mex. I also wanted a "real" meal without having to work too hard at it. We really enjoyed this. Other cuts of chicken can be used, although I recommend staying away from boneless skinless breasts because I think they tend to dry out in a slow cooker. Since every one's crock pots heat differently and grains can be tricky to cook in a CP, you may have to fool a little bit with the timing on the rice and barley. You could also make that separately and just add it in at serving time. Cooked the way I did it, it almost had a risotto-like texture to it.

3 chicken breast halves
1 cup onion, chopped
1 garlic clove, chopped
1 (14 1/2 ounce) can diced tomatoes with mild green chilies, with juice
1 cup tomato juice
1 teaspoon chipotle chile, minced
1 tablespoon chili powder
1 teaspoon ground cumin
1/3 cup uncooked medium barley
1/3 cup uncooked medium grain brown rice
fresh ground black pepper, to taste
cheese (optional)
sour cream (optional)

Steps:

  • Sprinkle chicken with pepper and lightly brown in a large nonstick skillet, 5 minutes on each side.
  • Place onion, chipotle pepper, and garlic in the crock pot, followed by the chicken.
  • Pour tomato juice over the chicken.
  • Sprinkle chicken with cumin, chili powder, and more black pepper.
  • Pour canned tomatoes & green chilis over chicken.
  • Cover and cook on low for 4-5 hours.
  • Remove chicken, and stir uncooked rice and barley into the slow cooker (check the dryness at this time, too, and add some water or other liquid in if you need to).
  • Place chicken back on top and continue to cook on low for 1 1/2 - 2 1/2 more hours until grains are tender but not overdone.
  • Serve with cheese and sour cream, if desired.

This recipe is our favorite combination and has a mexican flair. Plus, using the crock pot makes this dish simple & fills the whole house with a nice aroma. We like it best served over cooked egg noodles or rice. I gave this recipe to my cousin & she serves it by adding spoonfuls of it to pre-made taco shells. (Note: sometimes instead of onion & red bell pepper I just add 1-1 1/2 cups of frozen bell pepper/onion from the bag in the freezer secion)

5 chicken breasts (I use the family size package of 5 that I store in the freezer)
1 (15 1/2 ounce) can black beans, drained
1 cup frozen corn
6 ounces black olives, drained (sliced black olives)
1/2 onion, chopped
1/2 red bell pepper, chopped
1 (15 ounce) jar salsa, medium
1 (8 ounce) package cream cheese
1 -2 tablespoon taco seasoning (I use Taco Bell or Lawry's Taco Seasoning)

Steps:

  • Add all ingredients to crock pot EXCEPT cream cheese & yes, you can add the chicken breasts frozen.
  • Cook on high for 4-6 hours or low for 8 hours.
  • Add the package of cream cheese (whole) to top of cooking chicken mixture for last 30 minute of cooking.
  • Serve over cooked rice or egg noodles with a dollup of sour cream & sprinkles of shredded cheddar if desired.

1 (19 ounce) can kidney beans, drained
1 (15 ounce) can chili beans, mexican style
3 (6 ounce) cans reduced-sodium tomato juice
1 (15 ounce) can diced tomatoes with green chilies, drained
1 cup celery, chopped
1 cup carrot, sliced
1 cup onion, chopped
1 cup frozen corn
2 garlic cloves, minced
2 bay leaves
2 teaspoons beef bouillon granules
1 teaspoon dried basil, crushed
1 teaspoon dried oregano, crushed
1 teaspoon dried sage, crushed
1/2 teaspoon paprika

Steps:

  • Put the ingredients into the crock pot (3 quart size or bigger) in the following order: All beans, corn, celery, onion, carrot, chicken, tomato juice, tomatoes, garlic, garlic, basil, oregano, sage, paprika, bouillon, and bay leaves.
  • Cook on high for 4-5 hours or on low heat for 8-10. Note: My chicken was still partially frozen and it took 4.5 hours on high heat.
  • Remove and discard bay leaves. Enjoy!

6 chicken breasts
1/4 c melted butter
2 pkg hidden valley fiesta ranch dip mix
2 can(s) cream of mushroom soup, low sodium

Steps:

  • 1. Dip chicken into melted butter then roll in the dip mix, and set aside. Once all done. Pour the remaining butter into the bottom of the crockpot. Layer the chicken breasts into crock. Then Pour over the two cans of soup. Lastly sprinkle the remaining dip mix over all. Put lid on and cook on high 3-4 hours or on low 6-7 hours till chicken is tender.
  • 2. I serve this with a roasted garlic basmati rice and broccoli. I also add a small amount of sliced sauteed mushrooms in to the pot for the mushroom lovers.
