Time 30m

Yield 6-8 serving(s)

Number Of Ingredients 11

6 medium tomatoes, quartered and peeled
1 medium onion, sliced
1 medium green pepper, cut in strips
1 large cucumber, sliced
3/4 cup cider vinegar (I use white)
1/4 cup water
5 teaspoons sugar (heck just sweeten to taste!)
1 1/2 teaspoons celery salt
1/2 teaspoon salt
1/2 teaspoon red pepper (never use it!)
1/8 teaspoon pepper

Steps:

  • Combine veggies in a bowl.
  • In saucepan bring to boil vinegar, water, sugar, celery salt, salt, peppers.
  • Pour over veggies and chill at least 8 hours.

Tips:

  • Choose ripe, firm tomatoes: Overripe or bruised tomatoes will not hold their shape as well when roasted.
  • Use a variety of tomatoes: Different types of tomatoes will give your dish a more complex flavor. Try using a combination of cherry tomatoes, Roma tomatoes, and heirloom tomatoes.
  • Roast the tomatoes at a high temperature: This will help to caramelize the sugars in the tomatoes and give them a slightly smoky flavor.
  • Add some herbs and spices: A few simple herbs and spices can really enhance the flavor of roasted tomatoes. Try adding some garlic, basil, oregano, or thyme.
  • Serve the tomatoes warm or cold: Roasted tomatoes can be served warm as a side dish or appetizer, or they can be chilled and added to salads, sandwiches, or pasta dishes.

Conclusion:

Fire and ice tomatoes are a delicious and versatile dish that can be enjoyed in many different ways. With their smoky flavor and slightly sweet taste, they are a perfect addition to any meal. So next time you are looking for a quick and easy recipe, give fire and ice tomatoes a try. You won't be disappointed!
