MEDITERRANEAN FISH CHOWDER WITH POTATOES AND KALE

Mediterranean Fish Chowder With Potatoes and Kale image

This brothy fish stew gets extra body and heft from the kale and potatoes, and a hint of the Mediterranean from thyme, parsley and bay leaf. The method is straightforward. First make a mirepoix of onion, celery and carrot. Add garlic, anchovies and parsley, followed by the tomatoes and paste, and finally the potatoes and bouquet garni. Simmer for 30 minutes while the kale is cooked separately, then add the fish. Take care not to overcook the fish - it's done as soon as it flakes easily when you nudge it with a fork.

Time 1h

Yield 6 servings

Number Of Ingredients 17

2 tablespoons extra virgin olive oil
1 large onion, chopped
1 celery rib, chopped
1 medium carrot, chopped
Salt to taste
2 to 4 garlic cloves, minced
4 anchovy fillets, soaked in water for 4 minutes, drained and chopped
2 tablespoons chopped fresh parsley
1 (28-ounce) can chopped tomatoes, with liquid
1 tablespoon tomato paste
1 quart water
1 pound fingerling or Yukon gold potatoes, scrubbed and sliced
A bouquet garni made with a bay leaf, a strip of orange zest, a couple of sprigs each thyme and parsley, and a dried red chili if desired, tied together with a string
Generous pinch of saffron (optional)
Freshly ground pepper
1 bunch (10 to 12 ounces) black kale, stemmed and washed thoroughly in 2 changes of water
1 1/2 pounds firm, white-fleshed fish, like halibut, tilapia, Pacific cod or black cod, cut in 2- or 3-inch pieces

Steps:

  • Heat the olive oil over medium heat in a large, heavy soup pot or Dutch oven and add the onion, celery and carrot. Cook, stirring, until the onion softens, about 5 minutes.
  • Add a generous pinch of salt and stir in the garlic, anchovies and chopped parsley. Cook, stirring, until the mixture is very fragrant, another minute or two, and add the tomatoes and tomato paste. Cook, stirring often, until the tomatoes have cooked down a bit and the mixture smells aromatic, about 10 to 15 minutes.
  • Add the water, potatoes, salt to taste and the bouquet garni, and bring to a simmer. Add the saffron, turn the heat to low, cover and simmer 30 minutes. Taste, adjust salt and add pepper to taste. Remove the bouquet garni.
  • While the soup is simmering, bring a medium pot of water to a boil, salt generously and add the kale. Cook 2 to 3 minutes, until tender but still colorful. Transfer to a bowl of cold water, then drain and squeeze out excess water. Chop coarsely and set aside.
  • Shortly before serving, season the fish with salt and pepper and stir into the soup, along with the kale. The soup should not be boiling vigorously. Simmer 5 minutes (depending on the thickness of the fillets), or just until the fish flakes easily when poked. Remove from the heat, taste once more and adjust seasonings, and serve.

MARMITAKO - BASQUE FISH STEW

Marmitako - Basque Fish Stew image

"This warming Basque fish stew receives its name from the saucepan that it is cooked in, a Marmita." From notesfromspain.com Posted for ZWT 5.

Provided by ThatSouthernBelle

Categories     Tuna

Time 1h30m

Yield 4 serving(s)

Number Of Ingredients 11

600 g fresh tuna (or Bonito if you are in Spain)
1 kg potato
2 onions
2 tomatoes
3 garlic cloves
2 bay leaves
4 tablespoons olive oil
1 teaspoon sweet paprika
1 cayenne pepper
1 liter water
2 sprigs parsley

Steps:

  • Start by peeling the potatoes and slicing them roughly. Then peel and thinly slice both the onion and the garlic. Pour the oil into a saucepan and let it warm on the hob until it starts to smoke. Then add the potatoes, the onion and the garlic and let these cook for about 5 minutes, turning occasionaly.
  • Next add the bay leaves, the cayenne pepper, and finally a tsp of sweet paprika. Be careful at this point, you need to get the paprika coated in the oil without burning it - to do this successfully stir non-stop for between 20 to 30 seconds then immediately add the water, until the potato mixture is covered. Remove the cayenne pepper, and let the stew boil for 20 minutes.
  • Meanwhile, prepare the tomatoes and the fish. To easily peel the tomatoes, scald them (cover for half a minute with boiling water) and then remove the skin. Chop the tomatoes roughly and purée them using a fork. Next, cut the fish into small cubes, carefully removing any remaining bones.
  • When the 20 minutes are up (this time really depends on the type of potatoes) add the tomato purée and leave the dish simmering on the hob for a further 7 minutes. Then add the tuna, and cook it for just 5 to 7 minutes more - you really have to be careful not to overcook the fish or it won't be tender. Sprinkle with the chopped parsley and serve in bowls.

Tips:

  • Choose the right type of fish: Firm-fleshed fish like cod, haddock, or halibut are best for stews, as they hold their shape well during cooking.
  • Don't overcook the fish: Fish cooks quickly, so be careful not to overcook it and make it tough. Simmer the stew gently until the fish is just cooked through.
  • Use a variety of vegetables: Potatoes are a classic addition to fish stews, but you can also add other vegetables like carrots, celery, onions, and peas.
  • Season the stew well: A good fish stew should be flavorful, so don't be afraid to use plenty of herbs and spices. Common seasonings for fish stews include salt, pepper, garlic, paprika, and thyme.
  • Serve the stew with crusty bread or rice: Fish stew is a hearty and filling meal, so serve it with something to soak up all the delicious broth. Crusty bread or rice are both great options.

Conclusion:

Fish and potato stew is a classic comfort food that is easy to make and can be enjoyed by people of all ages. With its simple ingredients and delicious flavor, this stew is sure to become a favorite in your household. So next time you're looking for a quick and easy meal, give fish and potato stew a try.
