FLANNEL CAKES

This is the world's best pancake recipe. It comes from the "American Woman's Cookbook", circa 1938, revised 1970. I learned to make these because my mother's pancakes sank like lead in your stomach. These float like air! I like to serve these with jam instead of syrup.

Tips:

  • Choose the right ingredients: Use high-quality, fresh ingredients for the best results. Make sure your buttermilk is fresh and your butter is softened to room temperature.
  • Don't overmix the batter: Overmixing the batter can result in tough, dense pancakes. Mix just until the ingredients are combined and there are no more lumps.
  • Use a hot griddle: A hot griddle is essential for getting perfectly cooked pancakes. Preheat your griddle or skillet over medium-high heat before cooking.
  • Cook the pancakes in batches: Don't overcrowd the griddle or skillet when cooking the pancakes. This will prevent them from cooking evenly.
  • Flip the pancakes only once: Once the pancakes start to bubble around the edges and the centers are set, it's time to flip them. Only flip them once, as flipping them too often can make them tough.
  • Serve the pancakes immediately: Freshly cooked pancakes are the best, so serve them immediately with your favorite toppings. You can also keep them warm in a low oven until you're ready to serve.

Conclusion:

Flannel cakes are a delicious and versatile breakfast food that can be enjoyed by people of all ages. With their fluffy texture and slightly crispy edges, they're the perfect way to start your day. Whether you like them plain or topped with your favorite fruits, syrup, or whipped cream, flannel cakes are sure to please.
