- Heat butter in skillet over medium-low heat. Add onions and cook, stirring frequently, 30-40 minutes. Once onions begin to soften and brown, sprinkle with salt and stir in stock. Cook additional 1-2 minutes and remove from heat.
- Preheat oven to 425F.
- Lay flatbread on baking sheet. Brush with 1 tsp. olive oil and top with caramelized onions and goat cheese. Bake 8-12 minutes, or until cheese melts and crust is crisp. Remove from oven.
- Toss arugula with 1 tsp. olive oil, salt and pepper. Top flatbread with arugula and drizzle with balsamic glaze.

- Mix cheese and 4 teaspoons peel in small bowl. Season with salt and pepper. (Can be made 1 day ahead. Cover and chill.)
- Prepare barbecue (medium-high heat). Whisk 6 tablespoons oil, orange juice and 2 teaspoons orange peel in 13 x 9 x 2-inch glass dish. Season dressing with salt and pepper. Add onions; turn to coat. - Lightly dust a clean surface with flour, then turn the dough out and knead for 1-2 minutes to smooth and encourage gluten development. Shape the dough into a ball.
- Drizzle the olive oil in the bowl. Add the dough and turn to coat in the oil. Cover with a kitchen towel and let rise for 1 hour, or until doubled in size.
