1 pinch salt
⅔ cup white sugar
1 teaspoon vanilla extract
1 cup semisweet chocolate chips
1 cup salted peanuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line cookie sheets with parchment paper or aluminum foil.
  • In a large glass or metal mixing bowl, beat egg whites and salt until foamy. Gradually add sugar, continuing to beat until whites form stiff peaks. Fold in the vanilla and chocolate chips. Add peanuts if desired. Spoon onto the prepared cookie sheets.

1 1/2 cups chopped pecans
1 cup milk chocolate chips
2 egg whites
2/3 cup cups sugar
1 teaspoon vanilla extract
1 pinch salt

Steps:

  • Preheat oven to 350 degrees. Line baking sheet with foil or parchment paper. Do not grease.
  • Beat egg whites until stiff peaks form.
  • Stir together salt and sugar then gradually beat into the beaten whites.

2 large egg whites (room temperature)
2/3 cup sugar
1 teaspoon vanilla extract
1 pinch salt
1 cup pecans (finely chopped)
1 cup semisweet chocolate chips

Steps:

  • Gather the ingredients. Preheat the oven to 350 F and line a cookie sheet with foil and grease it with butter.
  • Beat the egg whites until foamy. You can do this by hand with a whisk , but it's much faster to use a hand mixer or a standing mixer on medium speed.
  • Gradually add the sugar and continue beating the egg whites until they hold stiff peaks .
  • Add the vanilla and salt. Blend well.
  • Using a spatula, fold in the pecans and chocolate chips by hand.
  • Drop dough by teaspoonfuls onto the prepared cookie sheet.
  • Put the cookies in the preheated oven and then turn the oven off .
  • Leave the cookies in the oven overnight, keeping the door closed so the heat doesn't escape too quickly, for about 10 hours.

Searching for some GF Christmas Cookie recipes and I stumbled across this one in Southern Living's "Our Best Christmas Recipe" book. It's easy to play around with the variety of candy chips (butterscotch/white chocolate, etc) or nuts you decide to use as well, so it's very versatile. Did not include cooking time because it's passive.

Number Of Ingredients 6

2 egg whites
1/2 teaspoon vanilla extract
1/4 teaspoon cream of tartar (GF brand)
1/2 cup sugar
1 (6 ounce) package semisweet chocolate morsels
1 cup chopped pecans

Steps:

  • Preheat oven to 350. Beat first 3 ingredients at high speed, using an electric mixer, until foamy. Gradually add sugar, 1 T at a time, beating until stiff peaks form and sugar dissolves (2-4 min). Fold in chocolate morsels and pecans.
  • Drop mixture by heaping teaspoonfuls onto cookie sheets lined with aluminum foil. Place in over, and turn off heat immediately. Do not open door for at least 8 hours. Carefully remove cookies from foil. Store cookies in an airtight container up to 1 week.

120g golden caster sugar
120g pecan , roughly chopped
150g dark chocolate (at least 70% cocoa solids), roughly chopped
1 tsp vanilla extract

Steps:

  • Preheat the oven to 180C/gas 4/fan 160C. Line two baking sheets with foil to cover. In a large clean bowl, whisk the egg whites with a pinch of salt until stiff and dry. Gradually whisk in the sugar a little at a time to make a thick and glossy meringue.
