FRENCH POTATO SALAD
Steps:
- Drop the white and red potatoes into a large pot of boiling salted water and cook for 20 to 30 minutes, until they are just cooked through. Drain in a colander and place a towel over the potatoes to allow them to steam for 10 more minutes. As soon as you can handle them, cut in 1/2 (quarters if the potatoes are larger) and place in a medium bowl. Toss gently with the wine and chicken stock. Allow the liquids to soak into the warm potatoes before proceeding.
- Combine the vinegar, mustard, 1/2 teaspoon salt, and 1/4 teaspoon pepper and slowly whisk in the olive oil to make an emulsion. Add the vinaigrette to the potatoes. Add the scallions, dill, parsley, basil, 1 1/2 teaspoons salt, and 1/2 teaspoon pepper and toss. Serve warm or at room temperature.

Tips for Making the Best French Dressing:
- Use high-quality ingredients. Fresh herbs, olive oil, and vinegar will make a big difference in the flavor of your dressing. - Use a good ratio of oil to vinegar. A general rule of thumb is to use two parts oil to one part vinegar, but you can adjust this ratio to your liking. - Add some Dijon mustard. Mustard helps to emulsify the dressing and give it a creamy texture. - Use fresh herbs. Fresh herbs, such as parsley, tarragon, and chives, will add a lot of flavor to your dressing. - Let the dressing rest. Let the dressing sit for at least 30 minutes before using it. This will allow the flavors to meld together. - Store the dressing properly. Store the dressing in a tightly sealed container in the refrigerator for up to two weeks. Conclusion:
French dressing is a classic dressing that can be used on a variety of salads. It is easy to make and can be customized to your liking. Experiment with different ingredients and ratios to find the perfect dressing for your next salad.
