Frenched green beans, also known as haricots verts, are a delicious and elegant side dish that can complement a variety of meals. They are prepared by removing the tough strings from the sides of the beans, resulting in a smooth and tender texture. Frenching green beans can be a bit time-consuming, but it is well worth the effort, especially if you are looking to create a special meal or impress your guests. Once you have mastered the technique, you will be able to quickly and easily prepare this classic side dish.

FRENCH-STYLE GREEN BEANS
These beans are one of my favorite side dishes. I serve them at our church steak dinner. A smattering of onions can be used to pep up the mild flavor of the beans.-Hope Meece, Ambia, Indiana

Steps:
- Force beans, trimmed ends first (keeping strings to the side), up through funnel of frencher (if using; see cooks' note, below).
- Cook beans in 2 batches in a 6- to 8-quart pot of boiling salted water , uncovered, until just tender, 4 to 5 minutes. Transfer beans with a slotted spoon to a large bowl and toss with salt, pepper, vinegar, and oil. Serve hot or warm.
FRENCH STRING BEANS
Steps:
- Preheat the oven to 425 degrees F.
- Blanch the string beans in a large pot of boiling salted water for just 4 minutes. Drain immediately and immerse in a large bowl of ice water to stop the cooking. When they are cool, drain and set aside.
- Meanwhile, in a large bowl toss the onion and bell peppers together with 2 tablespoons of olive oil and sprinkle generously with salt and pepper. Place in a single layer on a baking sheet and roast for about 15 minutes, tossing with a spatula from time to time to be sure the vegetables roast evenly.
- Just before serving, reheat the string beans in a large saute pan drizzled with a little olive oil. Sprinkle with salt and pepper and arrange on a platter. Spoon the roasted vegetables over the string beans and serve hot or at room temperature.
FRENCH GREEN BEANS
Steps:
- Fill a large saucepan with water, and bring to a boil. Add a handful of salt. Meanwhile, trim the ends off green beans, discarding any that are discolored or damaged. Add to the boiling water, and blanch for 2 to 3 minutes or until crisp tender. Drain the green beans. Immediately submerge in ice water to chill and to retain their bright color.
- Alternatively, place the green beans in a colander. Place the colander on top of boiling potatoes to steam until tender, occasionally turning to cook evenly, about 3 to 4 minutes.
PARMESAN GREEN BEANS
Parmesan seems to make everything taste better. For the best flavor, buy a chunk of the good stuff and grate it yourself just before using.

FRENCH FRIED GREEN BEANS
If your kids don't like their veggies, try this. You will have to cook them as fast as you can because they will be gone as fast as you can make them. Just don't tell them they're having greenbeans with their "pancakes". This is also good with broccoli and cauliflower, my favorite!.

Steps:
- Preheat oven to 250 degrees. Heat oil in deep fryer to 375 degrees. You could use a heavy pot on the stove top with about 2 inches of oil in it. You want the beans to float and not be crowded.
- Wash the greenbeans and dry them well. Snip the ends but leave them full length.
- Prepare pancake mix per instructions on the box. You will need about 3 cups of the mixture.
- Dip the greenbeans in the batter mixture and put them in the hot oil. Put them in one at a time so they don't "glue" together but you can do quite a few at a time. Cook them until they are golden brown.
- Remove cooked beans from oil and drain on paper towels. While they are still hot sprinkle them with the parmesan cheese.
- Place the beans on a cookie sheet in the preheated oven while you cook the remaining beans. Try not to leave them in the oven for too long as the batter will start to get soft. Usually mine don't make it to the oven because they get eaten before they get that far.
