REALLY TASTY SAUTEED FRESH ASPARAGUS

Really Tasty Sauteed Fresh Asparagus image

Asparagus is the most under-used side dish veggie on the market, IMHO. These seasonings will bump it up for you significantly -- I get a LOT of compliments on this recipe from friends and family. The truth is, I use exactly these same seasonings on my Ospidillo Cafe Brussells Sprouts. Enjoy!

Time 30m

Yield 6 serving(s)

Number Of Ingredients 9

1 1/2 lbs fresh asparagus, trimmed
8 tablespoons butter (1 stick)
2 tablespoons fresh lemon juice
4 ounces chicken broth
1/4 teaspoon white pepper
1/2 teaspoon Mrs. Dash seasoning mix
1/2 teaspoon seasoning salt
1 cup Velveeta cheese, melted (optional)
malt vinegar (optional)

Steps:

  • Trim the Asparagus: You can do this by grabbing each end and snapping it -- it will break off the tough part. You keep the flower end for cooking and refrigerate/store the larger ends as a great ingredient for vegetable stock on some other occasion. If the asparagus is young enough and pencil-sized, you probably won't need to trim it at all.
  • Clean the asparagus under cool, running water.
  • In a large no-stick skillet, over medium heat, lay in the asparagus, melt the butter, add in the lemon juice, pour in the chicken stock, and pepper lightly with the ground white pepper. The seasoned salt and Mrs. Dash can also be added at this time.
  • Bring to a boil, then reduce the heat to low, cover, and allow the asparagus to sautee for about 20-25 minutes until tender, moving it around with a fork once in awhile.
  • At the table, some folks like some melted cheese (Velveeta or other good melting cheese) over the asparagus while others enjoy some malt vinegar (or just a little good-quality balsamic vinegar) on it. I like it plain.
  • Serve hot.

ASPARAGUS VINAIGRETTE

Asparagus Vinaigrette image

Asparagus is at its flavorful best for only a short time, usually between March and May, when you'll want to avail yourself of its abundance. There are, of course, a number of ways to prepare and serve asparagus, but this method, in which it is paired with a savory vinaigrette, is one of Martha's seasonal favorites.

Tips:

  • Choose fresh, tender asparagus. Look for spears that are bright green and have tightly closed tips. Avoid spears that are wilted, woody, or have yellow or brown spots.
  • Trim the asparagus spears. Remove the tough ends of the spears, about 1 inch from the bottom. You can also peel the asparagus spears if desired, but this is not necessary.
  • Cook the asparagus until it is tender but still slightly crisp. You can boil, steam, or roast the asparagus. If you are boiling the asparagus, add a pinch of salt to the water to help preserve the green color.
  • Make sure the asparagus is completely cool before making the patties. This will help the patties hold their shape better.
  • Use a food processor to finely chop the asparagus. This will help the patties be smooth and well-mixed.
  • Add bread crumbs, eggs, and seasonings to the asparagus mixture. The bread crumbs will help bind the patties together, the eggs will help them hold their shape, and the seasonings will add flavor.
  • Form the asparagus mixture into patties. You can use your hands or a burger press to do this. Make sure the patties are about 1/2-inch thick and 2-3 inches in diameter.
  • Cook the patties in a pan over medium heat until they are golden brown and cooked through. You can also bake the patties in a preheated oven at 375 degrees Fahrenheit for about 15 minutes, or until they are cooked through.

Conclusion:

Asparagus patties are a delicious and versatile dish that can be served as an appetizer, main course, or side dish. They are easy to make and can be made with just a few simple ingredients. Asparagus patties are also a good source of vitamins and minerals, including vitamin C, potassium, and folate. So next time you are looking for a healthy and delicious recipe, give asparagus patties a try!
