SALSA VERDE: GREEN TOMATILLO SALSA

Salsa Verde: Green Tomatillo Salsa image

Provided by Food Network

Categories     condiment

Time 25m

Yield about 1 cup

Number Of Ingredients 5

8 ounces (5 to 6 medium) tomatillos, husked and rinsed
Fresh hot green chiles, to taste (roughly 2 serranos or 1 jalapeno), stemmed
5 or 6 sprigs fresh cilantro (thick stems removed), roughly chopped
Scant 1/4 cup finely chopped onion
Salt

Steps:

  • Whether you choose the verdant, slushy, herby freshness of the all-raw tomatillo salsa or the oil-colored, voluptuous, sweet-sour richness of the roasted version, tomatillos are about brightening tang. The buzz of the fresh hot green chile adds thrill, all of which adds up to a condiment most of us simply don't want to live without.
  • For the All-Raw version: Roughly chop the tomatillos and the chiles. In a blender or food processor, combine the tomatillos, chiles, cilantro and 1/4 cup water. Process to a coarse puree, then scrape into a serving dish. Rinse the onion under cold water, then shake to remove excess moisture. Stir into the salsa and season with salt, usually a generous 1/4 teaspoon.
  • For the Roasted version:
  • Preheat a broiler.
  • Roast the tomatillos and chiles on a baking sheet 4 inches below a very hot broiler until darkly roasted, even blackened in spots, about 5 minutes. Flip them over and roast the other side, 4 to 5 minutes more will give you splotchy-black and blistered tomatillos and chiles. In a blender or food processor, combine the tomatillos and chiles, including all the delicious juice that has run onto the baking sheet. Add the cilantro and 1/4 cup water, blend to a coarse puree, and scrape into a serving dish. Rinse the onion under cold water, then shake to remove the excess moisture. Stir into the salsa and season with salt, usually a generous 1/4 teaspoon.

SALSA VERDE CRUDA (RAW TOMATILLO SALSA)

Salsa Verde Cruda (Raw Tomatillo Salsa) image

Green salsas run the gamut on Mexico City streets. They can be boiled, pea green and soupy; they can be charred and thick and ecked with blackened bits of tomatillo. They can also be astonishingly hot, which is why it's always good to ask the street vendor, "Cual salsa pica mas?" (Which salsa is hotter?) This is my favorite version of all: a raw, acidic, chunky puree that slices through anything fatty; I like to serve it with slow-cooked pork, crispy carrot tacos, tlacoyos, Mexican-style eggs and almost anything else.

Provided by Food Network

Categories     condiment

Time 20m

Yield about 2 cups

Number Of Ingredients 9

9 fresh arbol chiles, or 4 to 5 serrano chiles
1 large garlic clove, peeled
10 ounces tomatillos, husked and rinsed (see below)
2 tablespoons cold water
1/4 cup plus 2 tablespoons diced onion
1 tablespoon chopped cilantro, or more to taste
Juice of 1/2 large lime, optional
1/2 teaspoon salt, or more to taste
1/2 medium Hass avocado, diced, optional

Steps:

  • 1 Chop the chiles and garlic roughly, and place in a blender jar. Blitz until mostly chopped.
  • 2 Cut the tomatillos in half and add to the blender jar with the water. Liquefy until the salsa transforms into a thick, chunky sauce.
  • 3 Pour into a bowl and stir in the onion and cilantro. Taste and see if you like it as is, or if you'd prefer more acidity or salt. If so, add the lime juice and taste again. Then stir in the salt and taste one more time, adding more salt, if necessary. Top with the avocado, if using, just before serving.
  • 4 Salsa (minus the avocado) keeps for about a week in a sealed container in the fridge.

FRESH SALSA VERDE

This is another great recipe from Sabrosa which is a local entertainment and dining guide. The tomatillos give this an almost citrusy bite. It is a great sauce for spooning on tacos, serving with chips or garnishing your favorite soup or beans. Leave the seeds in the jalapeno if you want this really "hot".

SALSA VERDE O ROJA CRUDA

Salsa Verde o Roja Cruda image

When tomatoes are at their best, we recommend making the salsa roja. During the rest of the year (even in winter), tomatillos still have plenty of flavor and can be your go-to salsa base.

Yield Makes 2 cups

Number Of Ingredients 8

12 oz. tomatillos (about 8 medium), husks removed, rinsed, quartered, or 12 oz. tomatoes, cored, quartered
½ medium avocado (optional; for making salsa verde)
¼ medium white onion, coarsely chopped
1 garlic clove
1 serrano chile, coarsely chopped
¼ cup (packed) cilantro leaves with tender stems
1 tsp. Diamond Crystal or ½ tsp. Morton kosher salt, plus more
1-2 Tbsp. fresh lime juice (optional; for making salsa roja)

Steps:

  • If making salsa verde, blend tomatillos, avocado, onion, garlic, chile, cilantro, and 1 tsp. Diamond Crystal or ½ tsp. Morton kosher salt in a blender on medium-low speed until salsa is smooth. Taste and season with more salt if needed. (Do not blend on higher than medium speed or your salsa will be airy and taste like a smoothie.)
  • If making salsa roja, blend tomatoes, onion, garlic, chile, cilantro, 1 Tbsp. lime juice, and 1 tsp. Diamond Crystal or ½ tsp. Morton kosher salt in a blender on medium-low speed until salsa is smooth. Taste and season with more salt and lime juice if needed.
  • Do Ahead: Salsa can be made 2 days ahead. Transfer to an airtight container; cover and chill.

Tips for Making the Best Fresh Green Salsa

  • Choose the Freshest Ingredients: Use ripe, in-season tomatoes, tomatillos, and herbs for the best flavor.
  • Use a Variety of Herbs: Don't be afraid to experiment with different herbs, such as cilantro, parsley, basil, or mint.
  • Roast the Tomatillos: Roasting the tomatillos adds a smoky, caramelized flavor to the salsa.
  • Don't Over-Process: Pulse the salsa ingredients in a food processor or blender just until they are combined. Over-processing will make the salsa too smooth.
  • Taste and Adjust: Taste the salsa and adjust the seasonings as needed. Add more salt, lime juice, or chiles to taste.

Conclusion

Fresh green salsa is a delicious and versatile condiment that can be used to add flavor to a variety of dishes. It is easy to make and can be tailored to your own taste preferences. Whether you like it mild or spicy, chunky or smooth, fresh green salsa is sure to be a hit at your next gathering. So next time you are looking for a quick and easy way to add some flavor to your meal, give fresh green salsa a try!
