I basically came up with this at the end of summer and picked all my tomatoes, bell and banana peppers and did not know what to do with them all! Threw everything in a pot and used the imagination. I served it with a dollop of sour cream and chips. Try topping with grilled cheese croutons. Make it your own!

Time 1h25m

Yield 8

Number Of Ingredients 16

2 tablespoons extra-virgin olive oil
½ sweet onion (such as Vidalia®), finely chopped
2 stalks celery, finely chopped
1 pinch salt and ground black pepper to taste
2 tablespoons minced garlic, or more to taste
3 (28 ounce) cans crushed tomatoes (such as San Marzano®), divided
1 (32 ounce) carton chicken broth
2 tablespoons ground paprika
½ tablespoon ground cayenne pepper
½ tablespoon ground dried chipotle pepper
½ cup uncooked jasmine rice
1 cup heavy cream
2 tablespoons sugar, or more to taste
4 tablespoons heavy cream, or to taste
2 (10 ounce) cans diced tomatoes with green chile peppers
2 tablespoons thinly sliced fresh basil leaves, or to taste

Steps:

  • Heat olive oil in a large, tall pot or Dutch oven over medium-high heat. Add onion and celery and season with salt and pepper. Cook until vegetables are slightly opaque, 5 to 8 minutes. Add garlic; cook and stir for 2 minutes, being careful not to brown garlic.
  • Pour in 2 cans of crushed tomatoes and chicken broth; bring to a boil. Stir in paprika, cayenne pepper, and chipotle pepper. Add rice and reduce heat to medium-low or low to maintain a simmer. Cook, stirring every few minutes, until rice is tender and celery has softened, about 45 minutes. Puree soup with an immersion blender until smooth. Stir in heavy cream and sugar, and season with salt and pepper as needed.
  • Stir in diced tomatoes and remaining can of crushed tomatoes. Cook over medium heat until warmed through, 5 to 7 minutes. Ladle soup into warm bowls. Spoon remaining cream in spirals on each bowl and top with basil.

4 cloves garlic, peeled and minced
2 small onions, peeled and diced
2 teaspoons ground cumin
1 teaspoon ground coriander
2 cups chicken broth, homemade or low-sodium canned
8 medium tomatoes, seeded and cut into large dice

  • Stir in the bread pieces and the orange zest and cook for 5 minutes longer. Working in 2 batches, place the soup in a food processor and process until smooth. Tips:

  • Choose ripe, flavorful tomatoes. This will ensure that your bisque has a rich, sweet flavor. Look for tomatoes that are deep red in color and have no blemishes.
  • Roast the tomatoes and peppers. Roasting intensifies the flavors of the vegetables and gives the bisque a smoky depth of flavor. You can roast the vegetables in the oven or on a grill.
  • Use a good quality vegetable broth. The broth is the base of the bisque, so it's important to use a broth that has a rich flavor. You can use store-bought broth or make your own.
  • Don't overcrowd the soup pot. If you add too many vegetables to the pot, they won't cook evenly. Add the vegetables in batches if necessary.
  • Simmer the bisque for at least 30 minutes. This will allow the flavors to meld and develop. You can simmer the bisque for longer if you want a more intense flavor.
  • Serve the bisque with your favorite toppings. Some popular toppings include croutons, grated Parmesan cheese, and fresh herbs.

Conclusion:

Fresh tomato and pepper bisque is a delicious and easy-to-make soup that is perfect for a light lunch or dinner. It is also a great way to use up leftover tomatoes and peppers. This bisque is full of flavor and nutrients, and it is sure to become a favorite in your home.
