1 package (8 oz) cream cheese, softened
1 can (14 oz) sweetened condensed milk (not evaporated)
1/4 cup mayonnaise
2 tablespoons lemon juice
1 can (16 oz) jellied cranberry sauce
1 bag (16 oz) frozen dark sweet cherries
1 can (20 oz) crushed pineapple, drained
2 tablespoons chopped nuts

Steps:

  • In large bowl, beat cream cheese, condensed milk, mayonnaise and lemon juice with electric mixer on low speed until smooth and fluffy.
  • Add cranberry sauce; beat on low speed until blended. Fold in cherries and pineapple. Spoon evenly into ungreased 13x9-inch (3-quart) glass baking dish. Sprinkle with nuts. Cover; freeze 6 hours or until firm.
  • To serve, let stand at room temperature 30 minutes or until slightly softened. Cut into squares.

I found this in a Southern Living Cookbook when I was looking for something different for Thanksgiving. This recipe can be used as a salad or dessert and my family loves it!

16 oz can whole berry cranberry sauce
8 oz can crushed pineapple, drained
1 small can mandarin oranges, drained
1 tsp lemon juice
8 oz container sour cream (can use low fat)

Steps:

  • 1. Mix all ingredients together and pour into a 9x5 loaf pan. Cover and freeze until firm. To serve remove from freezer let sit at room temperature about 5 minutes, slice and serve on lettuce leaves, if desired.
  • 2. This can also be put into paper lined muffin cups for individual servings. Just peel away the paper and serve. Delicious as a salad or I like it also as a frozen fruit dessert.
  • 3. 158 calories per serving
