1 box instant chocolate pudding (6 serving size)
2.5 cups cold milk
16 graham crackers
7 oz marshmallow creme
4 oz cream cheese (softened)
8 oz frozen whipped topping (thawed)

Steps:

  • Line a 9x13 pan with foil or parchment paper, allowing paper to overhang pan.
  • In a medium bowl, whisk together pudding mix and milk until smooth and creamy. Pour into 9x13 pan and spread into an even layer. **See note**
  • Chill pudding layer while you mix up the marshmallow layer.
  • In a medium bowl, beat together cream cheese and marshmallow cream until smooth. Fold in whipping topping.
  • Spread marshmallow layer over chocolate layer. Cover with foil.
  • Freeze layers about 6 hours, until firm enough to cut through (freezing time will vary depending on how cold your freezer is). Use the foil or parchment paper to remove layers from 9x13 pan and place on a cutting board.
  • Break 15 graham crackers in half. Slice pudding/marshmallow layers into 15 squares the same size as the graham crackers. If your layers have frozen very hard you may want to wait 15 minutes before slicing.
  • Sandwich layers in between two graham crackers. (Watch the video in the post for an easy way to do this.)
  • Eat right away or store sandwiches in the freezer in an airtight bag or container. Graham crackers will soften slightly if stored in the freezer for a while, and I think that makes these taste even better. After they've been frozen, allow them to rest at room temperature 15-20 minutes before eating for the best texture.

1 jar (7 ounces) marshmallow fluff
1 tub (8 ounces) cool whip
2 cups (490g) milk
1 box (3.4 ounces) instant chocolate pudding
12 graham crackers, (broken into 24 squares)

Steps:

  • Prepare a 9x13-inch pan by lining it with parchment paper. (The paper should extend up the sides.)
  • In a medium bowl, combine the cream cheese, marshmallow fluff, and cool whip. Pour the mixture into the prepared 9x13-inch pan.
  • In a separate bowl, combine the instant pudding and milk. Mix with a hand mixer (about 2 minutes or until thickened). Pour pudding over the marshmallow mixture and freeze for about 4 hours.
  • Remove the pan from the freezer and top with 12 graham cracker squares.
  • Place a cutting board on top of the pan, and carefully flip the pan over. The contents of the pan should now be on the cutting board.
  • Place the remaining 12 graham cracker squares on the frozen marshmallow mixture. Cut into 12 squares and serve cold!

14 or so graham crackers
1 pint vanilla ice cream, softened on microwave's defrost setting for 30 seconds

12 large marshmallows

Steps:

  • Microwave cream and chocolate in a 1-quart glass measuring cup on high power until very hot, about 2 minutes. Whisk until chocolate melts into a smooth sauce.

1 tablespoon honey
8 (4 3/4x2 1/4") graham crackers
1 (8-ounce) package cream cheese, softened
1 (14-ounce) can sweetened condensed milk
1/3 cup unsweetened cocoa powder
3/4 cup chilled heavy cream
1/2 cup light corn syrup
1/2 cup sugar
2 large egg whites
1/8 teaspoon cream of tartar

A standard 12-cup muffin pan; a kitchen torch

Steps:

  • Heat butter and honey in a small saucepan over medium or in a microwave-safe bowl, stirring occasionally, until butter is melted. Pulse graham crackers in a food processor until fine crumbs form. With the motor running, drizzle in butter-honey mixture and process until well combined. Transfer mixture to a medium bowl.
  • Using an electric mixer on high speed, beat cream cheese in a large bowl until creamy, about 3 minutes. Add condensed milk and cocoa powder and beat until smooth.

  • Meanwhile, using electric mixer on medium-high speed (or a stand mixer fitted with the whisk attachment), beat egg whites and cream of tartar in a large bowl until soft peaks form. Reduce mixer speed to low and carefully add sugar syrup to egg whites in a slow and steady stream. Increase speed to high and beat until mixture is light, glossy, and fluffy, 6-8 minutes.
  • Remove pies from molds, turn upside down, and remove paper liners. Dollop each pie with meringue. Using kitchen torch, carefully torch fluff. Serve immediately or return to freezer until ready to serve.

  • Make the ganache: Add the chocolate chips to a medium heatproof bowl.
  • In a small saucepan, bring the International Delight Cocoa PEBBLES™ Coffee Creamer to a simmer over medium heat. Place the remaining 10 graham crackers squares on top of the ganache and press down gently until the ganache starts to drip over the edges of the ice cream. Return to the freezer to firm for at least 30 minutes, up to 60 minutes.
  • Just before serving, use a small piece of paper to cover half of a graham cracker square diagonally. Use a small strainer to sift cocoa powder lightly onto the exposed half of the frozen s'more. Repeat with the remaining s'mores.
