The easiest Jello salad...you remember this one from your childhood! Strawberry, sliced pineapple, and bananas combine in this delicious dessert!

1 6 oz Strawberry gelatin
1 cup boiling water
2.5 cups strawberries, sliced (can use frozen but thaw them partially, first)
1 20 oz crushed pineapple, undrained
3 bananas (sliced)
2 cups sour cream
1 1/2 teaspoons sugar
1/2 teaspoon vanilla

Steps:

  • In a bowl, dissolve the strawberry gelatin in the boiling water. Stir in sliced strawberries, pineapple, and sliced bananas.
  • Pour half of the mix into a 9 by 12 inch baking dish. Hold the rest of the mixture aside.
  • Chill the mixture for an hour.
  • Combine the sour cream, the sugar and the vanilla, mix well. Spread the sour cream mix over the chilled gelatin.
  • Spoon the saved gelatin on top of the sour cream mixture.
  • Chill at least 4 hours, overnight is best.

The original recipe for this was called "Champagne Salad". I changed it because I leave out the bananas and pecans as my kids don't care for them. If you wish to include them, add 2 diced bananas and 1 cup chopped pecans. I place this in cupcake liners (the foil kind) and freeze on a cookie sheet until solid and then place in a freezer bag. This makes portioning easy. The title says salad but this is realy more of a dessert.

3/4 cup sugar
8 ounces light cream cheese, softened
10 ounces frozen sliced strawberries, thawed
20 ounces crushed pineapple
10 ounces Cool Whip, thawed

Steps:

  • Drain pineapple.
  • In a large bowl, cream together the sugar and cream cheese.
  • Add the strawberries and pineapple.
  • fold in the cool whip.
  • Freeze in a 9 x 13 pan or in cupcake liners.
  • To serve: Thaw the 9 x 13 pan for about 20 minutes.
  • Cut into squares and serve.
  • My kids eat the cupcake size ones still frozen- they are like a popsicle.

1 pint vanilla ice cream, softened
3 medium bananas, chopped
1/4 cup pecans, chopped
1 tablespoon lemon juice
