1 small can frozen pineapple-orange juice concentrate, thawed
1/3 cup lemon juice

Steps:

  • Combine the peaches, oranges, pineapple, fruit cocktail, bananas, juice concentrate and lemon juice in a bowl and mix until combined. Place in small disposable plastic cups and cover with plastic wrap or foil. Freeze until firm. Remove from the freezer 45 minutes to 1 hour before serving to thaw.

These are just awesome! I love to make them up and freeze them for breakfast or a quick snack. For kid-sized servings, use 5-oz cups and fill them with 1/2 c. of the fruit mixture (yield 24 1/2-cup servings). For a larger serving, freeze in 9-oz cups (yield 12 1-cup servings). If using the larger cup, you need to remove them about 15 minutes before serving. FYI, in my freezer I timed the 9-oz cup and it took 1 hour for it to be slushy and 2 hours to be completely frozen. Dont worry if you taste it before freezing and the mixture is a little bit tart, the flavors mellow after freezing. Great for once-a-month cooking. Enjoy!

2 tablespoons granulated sugar
1 1/2 cups plain yogurt

1 1/2 teaspoons fresh lemon juice

Steps:

  • Preheat oven to 375 degrees. Lightly brush both sides of tortillas with melted butter and sprinkle both sides with granulated sugar. Lay tortillas over 6 jumbo muffin cups (tortillas will overlap). Bake until tortillas are soft and pliable, 3 minutes. Remove from oven and, with the bottom of a glass, gently press each tortilla into a muffin cup so it folds up and forms a cup shape. 10 tablespoons (1 1/4 sticks) unsalted butter, melted
8 tablespoons (about) sugar
8 tablespoons (about) finely chopped toasted hazelnuts
Chocolate Mousse
4 large eggs, separated
1/2 cup sugar
1/4 cup (1/2 stick) unsalted butter, cut into 1/2-inch pieces
1/4 cup water
1 teaspoon instant espresso powder
8 ounces bittersweet (not unsweetened) or semisweet chocolate, chopped
1 1/2-pint basket fresh raspberries
2 ripe pears, peeled, diced

Steps:

  • For phyllo cups:
  • Preheat oven to 375°F. Generously butter every other cup in 12-cup muffin pan. Place 1 phyllo rectangle on work surface; cover remaining phyllo with plastic wrap and damp cloth to prevent drying. Brush rectangle with melted butter; sprinkle with 1/2 tablespoon sugar and 1/2 tablespoon hazelnuts. Place second phyllo rectangle atop first; brush with butter and sprinkle with 1/2 tablespoon sugar and 1/2 tablespoon hazelnuts.   • Whisk egg yolks, 1/4 cup sugar, butter, 1/4 cup water, and espresso powder in large metal bowl to blend. Set bowl over saucepan of simmering water (do not let bowl touch water); whisk constantly until thermometer inserted into mixture registers 160°F, about 3 minutes. Add chocolate and whisk until melted and smooth. Turn off heat; leave bowl over water.
  • Using electric mixer, beat egg whites in another large bowl to soft peaks. Gradually add remaining 1/4 cup sugar, beating until stiff and glossy. Remove chocolate from over water. Fold 1/3 of beaten whites into warm chocolate mixture to lighten. Fold in remaining whites. Cover and chill until set, at least 3 hours or overnight.

1/2 vanilla bean or 1 teaspoon vanilla extract
2 cups water
1 cup sugar
3 cups (total) fruit: pears, peeled, cored, cut in 1/2-inch chunks, pineapple, peeled, cored, sliced into 1/4 inch thick dice, peaches, peeled, pitted, cut into 1/2-inch chunks, and/or nectarines, pitted, cut into 1/2-inch chunks
Seedless grapes, halved
Orange segments
Cherries, pitted
Mango, peeled and cut into 1/2-inch chunks
2 envelopes gelatin (5 teaspoons)
4 cups apple juice
1/4 cup sugar

Steps:

  • If using a vanilla bean, split in half and scrape seeds out. Reserve all. In a medium saucepan, bring the water, sugar, and vanilla bean pod and seeds or extract to a boil. Lower the heat and simmer.
  • Drop in the pear and pineapple and poach for 4 minutes. Remove with a slotted spoon and set aside.
  • Drop in peach and nectarine, and poach for 2 minutes. Remove with a slotted spoon and set aside.
  • Drop in grapes and orange segments, and poach for 1 minute. Remove with a slotted spoon and set aside. Drop in cherries, and poach for 2 minutes. Remove with a slotted spoon and set aside. Since they will discolor the syrup, always do them last.
  • When you have finished, put all of the fruit back in the syrup and set aside to cool down. Once cool strain the fruit and reserve. The syrup can be saved for another use.
  • Mango may be added raw.
  • Prepare your favorite gelatin: In large bowl, soften gelatin by stirring it into 1/2 cup apple juice. Set aside.
  • In small saucepan, bring the remaining 3 1/2 cups of apple juice and the sugar to a boil. Boil until the crystals have dissolved, about 1 minute. Pour it over the gelatin and stir to dissolve.
  • Stir in the reserved fruits and pour into 6-ounce footed cups. Chill several hours until set.

1 cup sliced fresh strawberries
100 (3-ounce) bathroom plastic cups
1 (64 fluid ounce) bottle tropical juice blend (such as V8 Splash®)

Steps:

  • Toss peaches, bananas, grapes, blueberries, and strawberries together in a large bowl.
  • Fill plastic cups halfway with peach mixture. Top with tropical juice, leaving some room at the top for expansion. Freeze until solid, 8 hours to overnight.

1 can frozen pineapple juice
1 can frozen orange juice
1 cup water
1 cup sugar
2 tablespoons lemon juice
3 medium bananas
1 (16 ounce) package frozen strawberries
1 can mandarin orange
1 can crushed pineapple

Steps:

  • In large bowl prepare pineapple juice concentrate according to package directions.
  • Add orange juice concentrate, water, sugar, lemon juice and fruit.
  • Spoon 3/4 cupful into each plastic cup.
  • Place cups in pan and freeze.
  • Remove from freezer 40-50 minutes before serving.
  • Or place in microwave for approximately 15-20 seconds prior to serving.
