1 teaspoon pure vanilla extract
1/4 cup water
2 large eggs
1 1/2 cups whole-wheat flour
1/4 cup good-quality cocoa powder

  • Spoon the batter into the muffin liners until they are almost full. Bake for 12 to 15 minutes, or until a toothpick inserted into the center of a muffin comes out just damp with small crumbs attached. Place the muffins on a cooling rack and let them cool for at least 5 minutes before digging in!

FUDGY BANANA MUFFINS

We love the flavor combination of chocolate and banana. Once when I had no chocolate chips on hand, I made these moist muffins with chunks of chocolate bars instead. My husband likes them even better this way, since they have big bites of chocolate. -Kristin Wagner, Spokane, Washington

Tips:

  • To ensure perfectly ripe bananas, use ones with brown spots on the peel. They're sweeter and add a rich banana flavor to the muffins.
  • Don't overmix the batter. Overmixing can result in tough muffins. Mix just until the ingredients are combined.
  • For a moist and fudgy texture, use brown sugar instead of granulated sugar. Brown sugar contains molasses, which helps to keep the muffins moist.
  • Don't skimp on the chocolate chips. They add a delicious chocolatey flavor and texture to the muffins.
  • Fill the muffin cups almost to the top. This will help the muffins to rise properly.
  • Bake the muffins until a toothpick inserted into the center comes out clean. Overbaking can result in dry muffins.
  • Let the muffins cool completely before frosting them. This will help the frosting to set properly.
