This is a great salad recipe that I found on Allrecipes (submitted by Kim Fusich). I am posting it with the changes suggested by multiple reviewers, because I think those changes really boosted the flavor of this salad. I posted a separate Italian version because I think the two salads are significantly different.

Yield Makes 4 servings

Number Of Ingredients 11

1/2 cup olive oil
1/3 cup white wine vinegar
4 teaspoons Moroccan spice blend
1 15-ounce can garbanzo beans (chickpeas), drained
1 1/2 cups coarsely chopped seeded tomatoes
1 1/2 cups coarsely chopped seeded peeled cucumbers
1 cup coarsely crumbled feta cheese
1/2 cup chopped red onion
1/3 cup chopped fresh Italian parsley
4 whole pita bread rounds, halved crosswise
Plain yogurt

Steps:

  • Whisk together olive oil, white wine vinegar, and Moroccan spice blend in medium bowl. Place drained garbanzo beans in large bowl and mix in enough vinaigrette to coat. Let stand 10 minutes to allow flavors to blend.
  • Add tomatoes, cucumbers, feta cheese, red onion, and parsley to garbanzo beans. Mix in enough vinaigrette to coat. Season bean salad to taste with salt and pepper. Fill pita halves with bean salad and top with dollop of yogurt. Place 2 pita halves on each of 4 plates; pass remaining vinaigrette separately.

Tips:

  • Choose the best beans: Use dried garbanzo beans for the best flavor and texture. If using canned beans, rinse them well before using.
  • Cook the beans properly: Follow the instructions in the recipe carefully to ensure that the beans are cooked through but not overcooked.
  • Use fresh vegetables: Fresh vegetables will give your salad the best flavor. If you can't find fresh vegetables, frozen vegetables can also be used.
  • Don't overdress the salad: A little dressing goes a long way. Too much dressing will overwhelm the other flavors in the salad.
  • Serve the salad chilled: This salad is best served chilled. You can make it ahead of time and store it in the refrigerator for up to 3 days.

Conclusion:

Garbanzo bean salad with feta cheese is a delicious and healthy salad that is perfect for a light lunch or dinner. It is packed with protein, fiber, and vitamins, and it is also a good source of iron and calcium. The salad is easy to make and can be tailored to your own taste preferences. With its bright flavors and colors, this salad is sure to be a hit at your next gathering.
