Yield Makes 4 servings

Number Of Ingredients 4

2 pounds medium-size unpeeled Yukon Gold potatoes, each cut into wedges
6 tablespoons olive oil, divided
5 large garlic cloves, peeled, halved
1 teaspoon chopped fresh thyme

Steps:

  • Steam potato wedges until very tender, about 15 minutes.
  • Meanwhile, heat 5 tablespoons oil in large skillet over low heat. Add garlic; sauté until golden, about 6 minutes.
  • Add potatoes and thyme to skillet. Mash coarsely. Season with salt and pepper. Transfer to bowl, drizzle with remaining 1 tablespoon oil, and serve.

Tips:

  • Choose the right potatoes: Waxy potatoes like Yukon Gold, Red Bliss, or fingerling potatoes hold their shape well and won't disintegrate during cooking.
  • Cut the potatoes uniformly: This will ensure that they cook evenly.
  • Soak the potatoes in cold water before cooking: This helps remove excess starch and prevents them from sticking together.
  • Use a heavy-bottomed skillet: This will help distribute heat evenly and prevent the potatoes from burning.
  • Don't overcrowd the skillet: Cook the potatoes in batches if necessary to avoid steaming.
  • Be patient: It takes time to get the potatoes crispy and golden brown. Don't rush the process.
  • Season to taste: Add salt, pepper, and other seasonings to taste.
  • Serve immediately: Garlic and olive oil potatoes are best served hot and crispy.

Conclusion:

Garlic and olive oil potatoes are a simple but delicious side dish that can be enjoyed with a variety of meals. They are easy to make and can be tailored to your own taste preferences. With a few simple tips, you can make the perfect garlic and olive oil potatoes every time.
