I love this recipe. It is so simple, and yet, so delicious. I serve these potatoes with my Tarragon Cream Chicken. However, they are a delicious accompaniment to any meal. I took this recipe from Southern Living. It can be found in their Ultimate Quick and Easy cookbook. I generally do make a couple of changes- I add 1/4-1/2 tsp. salt to the garlic butter. I also often add minced fresh dill when I have it. Enjoy!

Tips:

  • Select suitable new potatoes: Look for small, firm potatoes with smooth skin. Avoid any with bruises or large eyes.
  • Prepare the potatoes: Scrub the potatoes thoroughly to remove any dirt or debris. Cut them into halves or quarters, depending on their size.
  • Utilize fresh herbs: For optimal flavor, use fresh herbs like dill, parsley, and chives. They impart a more vibrant taste compared to dried herbs.
  • Properly roast the potatoes: When roasting the potatoes, spread them in a single layer on a baking sheet. This ensures even cooking and crispy edges.
  • Enhance with aromatics: Add aromatics such as garlic and shallots to elevate the flavor profile of the potatoes. Sauté them in butter before adding the potatoes to the roasting pan.
  • Season generously: Don't be shy with the seasonings. Garlic powder, paprika, salt, and pepper are essential for creating a well-rounded flavor.
  • Timing is key: Roast the potatoes until they are tender on the inside and golden brown on the outside. Overcrowding the pan or roasting at too high a temperature can result in uneven cooking.
  • Garnish for visual appeal: Before serving, sprinkle some chopped fresh herbs over the roasted potatoes to enhance their visual appeal and add an extra layer of flavor.

Conclusion:

Garlic dill new potatoes are a delightful side dish that combines the earthy flavor of potatoes with the aromatic freshness of garlic and dill. They are perfect for any occasion, from casual gatherings to special celebrations. With careful selection of ingredients, proper preparation, and attention to detail, you can create a dish that is both delicious and visually appealing.
