1 head garlic, separated into cloves and peeled
2 teaspoons kosher salt
Freshly ground black pepper
1/4 teaspoon dried sage
1/4 teaspoon dried thyme
1 bay leaf
4 parsley sprigs
3 tablespoons extra-virgin olive oil
6 eggs, as needed
Chopped parsley, for garnish
Freshly grated Parmesan cheese
Crusty bread, optional

Steps:

  • In a large saucepan, combine the garlic, salt, pepper, sage, thyme, bay leaf, parsley sprigs and olive oil. Add 2 quarts of water. Place over high heat and bring to a boil; then reduce heat to low and simmer for 30 minutes.

2 heads new-crop garlic, if available, about 16 medium cloves
2 tablespoons extra virgin olive oil
12 sage leaves
Salt
pepper
4 to 6 eggs
4 to 6 slices day-old French bread, lightly toasted
Chopped parsley, scallions or chives for garnish

Steps:

  • Peel and slice or roughly chop the garlic cloves. Warm the oil in a heavy soup pot over medium heat. Add the garlic and sage and let them sizzle a bit without browning, about 2 minutes. Season with about a teaspoon of salt and a few grinds of pepper.

1 medium head of garlic, cloves peeled and thinly sliced
3 tablespoons olive oil
8 (1/2-inch-thick) baguette slices
1 quart chicken stock or broth
1/2 teaspoon dried hot red pepper flakes
4 large eggs
1/2 cup packed small fresh cilantro sprigs
4 lime wedges

Steps:

  • Cook garlic in oil in a deep 10-inch heavy skillet over low heat, stirring occasionally, until tender and pale golden, 8 to 10 minutes. Transfer garlic to a bowl with a slotted spoon. 2 cups garlic cloves
2 tablespoons extra-virgin olive oil
1 cup diced onion (1/4-inch dice)
1 cup finely chopped leek, white part only
1/2 cup diced celery (1/4-inch dice)
1 bay leaf
1 tablespoon grey salt
1 cup diced, peeled, russet potatoes
Freshly ground pepper
4 to 5 cups chicken stock or canned low salt chicken broth
1 tablespoon coarsely chopped fresh oregano leaves
4 cups roughly chopped spinach leaves
1 cup heavy cream

Steps:

  • Peel the garlic cloves, cut in half lengthwise, and remove the central greenish core. Put in a small pan of salted water and bring to a boil. Drain and repeat twice to remove the garlic's heat and leave only the sweetness behind.
  • Heat the olive oil in a large, heavy pot over medium heat until hot. Add the onion, leek, celery, bay leaf, and a little salt to draw the water out of the onion. Cover and cook until the vegetables are soft but not brown, about 10 minutes. Add the potatoes. Add the blanched garlic and stock. Season with salt and pepper, to taste. Bring to a boil over high heat, reduce the heat to a simmer, cover and cook until the vegetables are very tender, about 15 minutes.
  • Remove soup from the heat and cool to room temperature. Place cooled pot with soup in refrigerator to chill. Day of party re-heat soup over medium heat. Add the oregano, spinach, and cream and cook 1 minute to wilt the spinach. Transfer to blender and carefully blend until smooth *see note below.
  • *When blending hot liquids: Remove liquid from the heat and allow to cool for at least 5 minutes. Transfer liquid to a blender or food processor and fill it no more than halfway. If using a blender, release one corner of the lid. This prevents the vacuum effect that creates heat explosions. Place a towel over the top of the machine, pulse a few times then process on high speed until smooth.

50 g butter
1 onion, thinly sliced
1 potato, peeled and chopped into 1cm cubes
250 g wild garlic
1 1/8 liters chicken stock
150 ml double cream
4 eggs
1 dash white wine vinegar
1 tablespoon butter
200 g smoked bacon, finely chopped
1 stick French bread
olive oil, to drizzle
1 pinch cayenne pepper

Steps:

  • For the soup: melt the butter in a large pan until foaming, then add the onion and gently fry for 3-4 minutes, or until softened byt not coloured. Add the chopped potato and cover with the chicken stock. Cover with a lid and simmer gently for 10-12 minutes, or until the potatoes are tender.
  • Add the wild garlic leaves and stir for about 30 seconds, until wilted. Using a stick blender, blend the soup until smooth and then pass through a fine sieve. To preserv the vibrant green colour of the soup, place the large chunks of ice into a bowl and pour over the soup. When chilled, strain the soup again, leaving behind the ice. Stir in the cream.
  • For the poached eggs: bring a deep pan of water to the boil, then add a splash of vinegar and reduce the heat until the water is barely simmering. Crack the eggs into the pan and gently poach for 3-4 minutes, or until the egg is cooked to your liking. Remove and drain on kitchen paper.
  • Preheat the oven to 140C/120C fan/gas 1.
  • For the bacon and croutons: melt the butter in a frying pan until foaming, add the bacon and fry for 4-5 minutes, or until golden-brown and crisp. Drain on kitchen paper.
  • Thinly slice the French stick and place onto a baking sheet. Drizzle with olive oil and sprinkle with cayenne pepper. Bake in the oven for 5-6 minutes, or until golden-brown and crisp.
