Time 1h5m

Yield Makes 9

Number Of Ingredients 16

1 1/2 cups whole-milk ricotta
1/4 cup grated Pecorino Romano, plus more for serving
1 tablespoon extra-virgin olive oil
1 teaspoon finely grated lemon zest
Kosher salt and freshly ground pepper
Flour, for dusting
1 recipe Egg Pasta Dough
9 large egg yolks
3 tablespoons fresh lemon juice
1 teaspoon Dijon mustard
1/3 cup plus 2 tablespoons extra-virgin olive oil
Kosher salt and freshly ground pepper
4 ounces pancetta, guanciale, or bacon, cut into 1/4-inch-thick lardons
2 cloves garlic, minced (1 tablespoon)
1 bunch lacinato kale (about 12 ounces), tough stems removed, leaves sliced into bite-size pieces
1 bunch dandelion greens (about 10 ounces), tough stems removed, leaves sliced into bite-size pieces

Steps:

  • Ravioli: Stir together both cheeses, oil, and lemon zest in a medium bowl; season with salt and pepper and set aside.
  • On a floured work surface, roll out one square of the rested pasta dough to an approximately 16-inch square. Using a ruler and bench scraper or knife, lightly score a 12-inch square in center of dough, then score that 12-inch square at 4-inch intervals in both directions, to form a 3-by-3 grid of nine 4-inch squares. (Do not cut dough all the way through.)
  • Spoon a scant 1/4 cup ricotta mixture evenly into center of each square. Using back of spoon, create a small well in the center of each mound. Gently drop an egg yolk into each well.
  • Roll out remaining piece of dough to an approximately 16-inch square. On filled dough square, lightly brush water around cheese. Loosely drape second dough square over first. Working from the center outward, gently press any air pockets out from between doughs and press together around fillings.
  • Using a fluted pastry wheel, pizza wheel, or knife, cut out ravioli. Transfer to a rimmed sheet dusted with flour (preferably semolina).
  • Garlicky Greens: Whisk together lemon juice and mustard to combine, then slowly whisk in 1/3 cup oil to make a dressing; season with salt and pepper and set aside.
  • In a large straight-sided skillet over medium heat, cook pancetta with 1 tablespoon oil until browned and fat renders, 7 to 9 minutes. Transfer pancetta to a paper-towel-lined plate.
  • Return skillet to medium heat, add garlic, and cook until fragrant and sizzling, 15 seconds. Add remaining 1 tablespoon oil, then kale and dandelion greens, a handful at a time; season with salt and pepper and cook until wilted. Cover and continue cooking, stirring occasionally, until greens darken and become tender, 8 to 10 minutes more.
  • Meanwhile, cook ravioli in a large pot of generously salted boiling water until al dente, 8 to 10 minutes. Reserve 3/4 cup pasta water; drain.
  • Add reserved pasta water to greens in skillet and cook, uncovered, until water has mostly evaporated, 2 to 3 minutes. Remove from heat; stir half of reserved lemon dressing into greens.
  • Serve each raviolo over a bed of greens, drizzled with remaining lemon dressing and sprinkled with pancetta, Pecorino, and pepper.

SLOW-COOKED GARLICKY GREENS

Slow-Cooked Garlicky Greens image

When working with a large quantity of greens, it's much easier to sauté them if they're blanched first. Their time in the olive oil is more for flavoring and reaching the ideal texture.

4 pounds mixed hardy greens (such as Tuscan kale, curly kale, Swiss chard, and/or collard greens; about 6 bunches), ribs and stems removed
Kosher salt
4 garlic cloves, lightly crushed
1/2 cup olive oil, plus more for drizzling
2 chiles de árbol or 1/2 teaspoon crushed red pepper flakes

VLAD'S VERY GARLICKY GREENS

Vlad's Very Garlicky Greens image

Provided by Alton Brown

Categories     side-dish

Time 10m

Yield 4 servings

Number Of Ingredients 4

5 to 7 cloves garlic, peeled, plus 2 cloves garlic, one sliced, one minced
Enough olive oil to cover the bottom of a wide saute pan
4 big handfuls greens (baby mustard, turnip, chard), picked and roughly shredded
Salt and freshly ground black pepper

Steps:

  • Place saute pan over medium heat and then lightly crush 5 to 6 garlic cloves. When the pan is hot, add just enough oil to cover the bottom of the pan and add the garlic. Cook, stirring frequently until golden brown (3 to 5 minutes). Remove from the oil. At this point, the greens can be quickly Sauteed for a mild garlic flavor.
  • If you're looking for something a little stronger, thinly sliver 1 clove and add it to the pan stirring constantly (burned garlic is not Good Eats, nor is anything that touches it). Once the slivers turn golden, add the greens and toss to coat with the hot oil. Season with salt and pepper as soon as the greens start to wilt and plate immediately.
  • If you're looking for even more garlic flavor, finely mince a clove of garlic and toss it into the greens during the last 30 seconds of cooking and toss the greens to distribute. Keep the pan and the greens moving constantly, if you can.
  • Serve as a side dish or toss with pasta and serve as a main course.

BABY GREENS AND GARLICKY WHITE BEAN SALAD

Baby Greens and Garlicky White Bean Salad image

This is a very garlicky salad. A nice fast dinner. A slight adaptation from a recipe in "Weight Watchers Miracle Foods" cookbook. Each serving is 3 points as written. Though I suggest a tad more sauce, which would make the points go up a smidge. Red onion is preferred because of the milder taste. If you like the taste of raw onion, then yellow is fine too. The original recipe called for serving it immediately. I like to let it sit a few minutes so the tastes will meld, but it would not keep for more then an hour or 2. If you don't have baby greens, spinach would be excellent.

Garlicky White Bean Soup with Dark Greens -10-12 servings
You could serve with a sprinkling of parmesan cheese on top and rustic bread on the side.
Soak 4 cups of white beans overnight in plenty of water (I used great northern beans)
10-12 cups of water
2 garlic cloves, smashed and peeled
3 bay leaves
2 tablespoons olive oil
4 cups of baby spinach (or one bunch of kale, swiss chard, or dark green of your choice)
1/3 cup of olive oil
6 garlic cloves, peeled and minced or put through garlic press
3 teaspoons dried oregano
1/4 cup of tomato paste
Sea Salt and Pepper

Steps:

  • 1-Rinse and drain your beans, then add to a large pot. Add 10-12 cups of water, the smashed garlic cloves, bay leaves and olive oil. Bring to a boil and turn down heat to a low simmer. Simmer until beans are soft and tender. How long this takes will depend on how old your beans are, and what type you are using, but it should generally take about 1 1/2 hours. 2-Wash and drain the baby spinach leaves (or wash and chop dark greens of your choice). Add to soup and allow to simmer while you do step three. Baby spinach will only take a few minutes to completely cook, while kale or swiss chard can take up to 10-15 minutes to really soften. 3- In a small saucepan heat the olive oil until hot. Add the tomato paste, oregano, and garlic. Continually stir until the the olive oil is tinted with red, and the garlic is softening (but not brown). Pour this flavorful mix over your beans in the pot and stir in. 4-Taste test, you will need to add plenty of salt and pepper (remember you haven't added any in yet). Serve slightly cooled. If you serve it piping hot, you won't be able to taste as much of the flavors. Enjoy!

GARLICKY GREENS

GARLICKY GREENS image

Categories     Leafy Green

Yield 6 - 8 Servings

Number Of Ingredients 11

6 tbsp. extra-virgin olive oil
4 dried chiles de árbol
1 head garlic, cloves peeled and roughly chopped
2 cups Chicken Stock
2 heads kale (about 2 lbs.), trimmed and roughly
chopped
2 heads mustard greens (about 2 lbs.), trimmed and
roughly chopped
1 large head swiss chard (about 1 lb.), trimmed and
roughly chopped
Kosher salt and freshly ground black pepper, to taste

Steps:

  • 1. Heat 4 tbsp. of the oil in a large pot over medium-high heat. Add chiles and garlic and cook, stirring constantly, until fragrant, about 30 seconds. Add chicken stock and greens and stir well. Bring to a boil over medium-high heat, reduce heat to medium-low, and cook, covered, stirring occasionally, until tender, about 1 hour. Season with salt and pepper. Transfer greens with their liquid to a shallow platter and drizzle with remaining oil.

Tips:

  • Prep your greens thoroughly: Wash and trim your greens thoroughly to remove any dirt or debris. For leafy greens like kale or spinach, remove the tough stems.
  • Don't overcrowd the pan: When cooking greens, avoid overcrowding the pan. This will prevent them from cooking evenly and becoming soggy.
  • Use a high heat: Cooking greens over high heat helps to quickly wilt and tenderize them, while preserving their vibrant color and nutrients.
  • Add aromatics and seasonings: To enhance the flavor of your greens, add aromatic ingredients like garlic, onions, shallots, or ginger. Season them with salt, pepper, and other spices according to your preference.
  • Don't overcook: Greens cook quickly, so it's important to keep an eye on them to prevent overcooking. Overcooked greens can become mushy and lose their flavor.
  • Serve immediately: Once cooked, serve your greens immediately to enjoy their best flavor and texture.

Conclusion:

With their versatility and numerous health benefits, garlicky greens are a delicious and nutritious addition to any meal. Whether you prefer sautéing, steaming, or roasting, there's a cooking method to suit your taste and dietary preferences. Experiment with different recipes and flavor combinations to discover your favorite way to enjoy these leafy greens.
