- Preheat your oven then mix and bake the gingerbread according to the package directions; turn out onto a rack and let cool completely.
- While gingerbread is baking, cook the vanilla pudding according to the package directions; set aside and let cool.
- When pudding has cooled, stir in the pie filling, brown sugar, cinnamon, and cardamom.
- Crumble the cooled gingerbread into pieces (about 1/4 inch, but not too finely).
- (If you have a trifle bowl, wonderful- otherwise you can use another large decorative bowl or a punchbowl to assemble the trifle in).
- Put half of the crumbled gingerbread in the bottom of the bowl, sprinkle with half of the sherry or Southern Comfort (if using), then pour half of the pudding mixture over it, and then half of the whipped topping.
- Repeat the layers with the remaining prepared ingredients as above, then sprinkle the crushed gingersnaps over the top (2 or 3 tablespoons chopped pecans would make a good addition to the topping, as well).
- Cover with plastic wrap and chill overnight in the refrigerator.
- Notes: you can use spice cake instead of gingerbread for a gentler flavor.

- Preheat oven to 350°F with rack in middle. Butter a 13- by 9-inch baking pan. Line pan with foil, leaving an overhang at both ends, then butter foil.
- Whisk together flour, baking soda, spices, and salt.
- Beat butter and brown sugar with an electric mixer at medium speed until pale and fluffy, 3 to 5 minutes. Beat in egg until blended, then beat in molasses and buttermilk. At low speed, mix in flour mixture until smooth, then add hot water and beat 1 minute (batter may look curdled).

Using an electric mixer, beat butter in large bowl until fluffy. Beat in brown sugar. Beat in eggs, 1 at a time. Gradually beat in molasses, followed by 1 cup boiling water. Mix in grated lemon peel. Gradually mix in dry ingredients. Transfer batter to prepared pan. Bake until a tester inserted into the center of the cake comes out clean, about 20 to 25 minutes. Transfer to a rack to cool for 15 minutes. Run a knife around the pan sides. Turn out onto a rack and peel off paper. Cool and cut into 1-inch cubes.
- To assemble:
- Using a trifle bowl, start with an even layer of gingerbread cubes, top with 1/3 of the lemon curd mixture, and 1/3 of the blackberry sauce. Repeat 2 more times. Top with remaining whipped cream. Cover and refrigerate for at least 4 hours or overnight before serving.

- Preheat oven to 350 degrees. Butter a 9-inch-round-by-2-inch-tall cake pan; line with parchment.
- Sift together flour, baking soda, salt, 1 teaspoon ginger, and 1 teaspoon cinnamon in a large bowl, and set aside.
- Beat 8 tablespoons butter in electric mixer on medium-high speed until lightened, 3 to 4 minutes. Scrape down sides of bowl with rubber spatula. Add 1/2 cup sugar, 1/4 cup at a time; scrape down sides after each addition. Beat until fluffy, 3 to 4 minutes more. Add eggs, 1 at a time, beating 1 minute after each addition. - Juice lemon; place juice and both halves in large bowl of cold water. One at a time, peel pears, quarter, core, and cut into 1- to 1 1/2-inch chunks; transfer to acidulated water.
- Drain pears; transfer half to 12-inch skillet. Add 1/2 cup sugar, 2 tablespoons butter, 1/4 teaspoon ginger, and 1/4 teaspoon cinnamon. Place over high heat; saute, stirring, until sugar and butter melt and form caramel, 4 to 5 minutes. Reduce heat to medium high, cover, and continue cooking 10 minutes more, stirring occasionally. - Mix Flour, Baking Powder, Baking Soda, Ginger, and Allspice in bowl.
- In separate bowl, beat butter and 4 Tablspoons Sugar until smooth.
- In third bowl, Mix milk and Molasses together.
- Mix third bowl into the Butter Mixture and then FOLD combined mixture into the Flour Mixture.
- Pour into a pan (I use an 8" x 8" x 2") that is lined with Wax Paper.
- Bake in oven at 350 F for about 35- 40 minutes.
- Let stand for 5 minutes and remove the Gingerbread to a rack to cool.
- Peel, core and dice apples in small pieces.
- Put them into a pot with 4 Tablespoons of Sugar and 1/2 cup Water.
- COVER and cook for about 5 minutes.
- Remove lid and continue to stir continuously until mixture STARTS to thicken.
- WHIP Cream and 4 Tablespoons of Sugar until it forms Peaks.
- PLACE slices of Gingerbread, Applesauce on top and Whipped Cream on top of that in bowl and repeat in layers until bowl is full.
- NOTE: ROUNDED Glass Bowl makes lovely presentation!
- TOP with toasted nuts and CHILL for about an hour!

- In a small saucepan, sprinkle gelatin over cold water; let stand for 1 minute. Heat over low heat, stirring until gelatin is completely dissolved. Remove from the heat. In a large bowl, combine the pumpkin, brown sugar, cinnamon, ginger, 1/2 teaspoon vanilla, nutmeg, salt and gelatin mixture., In a large bowl, beat cream until it begins to thicken. Add confectioners' sugar and remaining vanilla; beat until soft peaks form. Fold 4 cups whipped cream into pumpkin mixture. Cover and refrigerate while preparing cake. Refrigerate remaining whipped cream., For gingerbread, in a large bowl, cream butter and brown sugar until light and fluffy. Beat in egg, then molasses. Combine the flour, ginger, baking soda, cinnamon and salt; add to the creamed mixture alternately with buttermilk, beating well after each addition. Beat in hot water., Transfer to a greased and floured 13x9-in. baking pan. Bake at 350° for 22-26 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack. Cut into cubes., In a 5-qt. trifle bowl or glass serving bowl, layer 4 cups gingerbread cubes, half of the pumpkin mixture and half of the whipped cream. Repeat with remaining gingerbread and pumpkin. Cover and refrigerate for at least 4 hours., Just before serving, spread remaining whipped cream over pumpkin mixture. Carefully arrange remaining gingerbread around edge of bowl; sprinkle with crystallized ginger.

GINGERBREAD AND LEMON CURD TRIFLE WITH BLACKBERRY SAUCE

- Put molasses in mixing bowl, add boiling water and butter and stir until well mixed and butter melts. Mix salt, ginger and soda together in a small dish, and add to molasses mixture and stir lightly. Stir in 2 c flour and mix. Turn into an 8x8 baking dish. bake at 375 for 25-35 min ot til the top springs back lightly and bread pulls away from the sides of the pan. Cut bread into a 9x9 grid for the trifle. For Lemon Curd Filling: Whip cream to soft peaks with sugar and vanilla. Place lemon curd in a large bowl. Fold in half of the whipped cream, till combined. Reserve the remaining cream for the top of the trifle. Blacberry Sauce: Place berries, sugar and salt in a medium saucepan and cook until the berries are soft and the sugar has melted. Transfer to a blender and and blend until smooth. Pour through a strainer into a bowl. Stir in the chambord and lemon juice. Set aside until ready to use. Layer gingerbread and lemon curd in a trifle bowl. Top with Blackberry Sauce, and place remaining lemon curd filling on top.

- Prepare and bake cake mix according to package directions. Cool completely on a wire rack. , In a large bowl, combine water and lemon juice. Peel pears, one at a time, quarter and cut into 1 to 1-1/2-in. chunks. Place in water mixture to prevent browning. , Drain pears. In a large skillet, combine 1/2 cup sugar, 2 tablespoons butter and 1/4 teaspoon each cinnamon and ginger. Add half the pears. Cook and stir over medium-high heat for 4-5 minutes or until syrup is golden brown. Reduce heat to medium-low; cover and cook 10 minutes longer, stirring occasionally. Transfer to a bowl. , Repeat with remaining sugar, butter, cinnamon, ginger and pears. Cool completely. , Meanwhile, for trifle cream, in a large bowl, beat the cream cheese, brown sugar, orange juice, orange zest and extract until blended. Gently fold in whipped cream., To assemble, cut cake into 1/4-in. slices. Place a third in a 3-qt. trifle dish or glass serving bowl; top with a third of pears and a third of cream cheese mixture. Repeat layers twice. Cover and refrigerate for several hours or overnight.

- Prepare and bake gingerbread according to package directions using two greased 9 inch round cake pans. Cool completely on wire racks.
- Meanwhile, for pudding, in a large saucepan combine pudding mix and milk. Stir until smooth. Cook and stir over medium heat until mixture comes to a boil. Cook and stir 1-2 minutes longer, or until thickened. Remove from heat and cool to room temperature.
- Combine pumpkin and brown sugar and stir into pudding.
- In a 4-quart glass serving bowl or trifle dish crumble one gingerbread cake and gently press down. Top with half of pudding mixture and half of whipped topping. Repeat layers.
- Cover and refrigerate overnight.
