YUKON GOLD GARDEN POTATO SALAD WITH APPLES AND HERBS

Yukon Gold Garden Potato Salad With Apples and Herbs image

Made with petite new potatoes, crisp red apple, and fresh garden herbs! A lovely alternative to regular potato salad, with the addition of tarragon and lovage! Lovage is a wonderful old-fashioned herb, very similar to celery, but a little stronger in taste and with a hint of anise -- a new addition to my herb garden and it is quickly becoming one of my favorites! You may substitute celery for the lovage, if you wish.

NORMAN POTATO SALAD WITH APPLES

Norman Potato Salad with Apples image

Categories     Salad     Dairy     Potato     Side     Wheat/Gluten-Free     Apple     Summer     Calvados     Gourmet     Vegetarian     Pescatarian     Peanut Free     Tree Nut Free     Soy Free     Kosher

Yield Serves 6 as a side dish

Number Of Ingredients 10

2 pounds yellow-fleshed potatoes such as Yukon Gold
3 tablespoons cider vinegar
2 Granny Smith apples
1 tablespoon fresh lemon juice
1 cup apple juice
1/2 cup well-chilled heavy cream
1/2cup mayonnaise
2 tablespoons coarsely chopped fresh flat-leafed parsley leaves
1 teaspoon Calvados (French apple brandy; optional)
freshly ground black pepper to taste

Steps:

  • In a 3-quart kettle cover potatoes with cold salted water by 2 inches and simmer until potatoes are tender but resist when pierced with a fork, about 20 minutes. Drain potatoes in a colander. When potatoes are just cool enough to handle, peel and cut into 1/4-inch-thick rounds. While potatoes are still warm, layer one third in a large serving dish or bowl and drizzle with 1 tablespoon vinegar. Season potatoes with salt and pepper. Continue layering in same manner with remaining potatoes and vinegar, seasoning with salt and pepper. Peel, quarter, and core apples. Cut quarters crosswise into 1/8-inch-thick pieces and in a bowl toss with lemon juice. In a small saucepan simmer apple juice until reduced to about 3 tablespoons. In a bowl beat cream until it just holds soft peaks and gently but thoroughly fold in reduced apple juice, mayonnaise, parsley, Calvados, and pepper. Season sauce with salt and gently toss together with potatoes and apples.

Tips:

  1. For the best potato salad, use waxy potatoes like Yukon Golds or Red Potatoes. They hold their shape well and won't get mushy.
  2. Be sure to cook the potatoes until they are tender but still firm. You don't want them to be too soft or they will fall apart when you mix them with the other ingredients.
  3. While the potatoes are cooking, you can make the dressing. This can be done ahead of time and refrigerated until you're ready to use it.
  4. Once the potatoes are cooked, drain them well and let them cool slightly before adding them to the dressing. This will help prevent the potato salad from becoming watery.
  5. Gently fold the potatoes into the dressing until they are evenly coated. Avoid stirring too vigorously, or you will break up the potatoes.
  6. Add any other desired ingredients, such as hard-boiled eggs, bacon, or celery. Cover the potato salad and refrigerate for at least 30 minutes before serving. This will allow the flavors to meld.
  7. Serve potato salad chilled or at room temperature. It's a great side dish for picnics, potlucks, and barbecues.

Conclusion:

Potato salad is a classic dish that can be enjoyed by people of all ages. It's a versatile dish that can be made with a variety of ingredients, so you can easily customize it to your own taste. Whether you like it simple or loaded with add-ins, potato salad is sure to be a hit at your next potluck or gathering. So next time you're looking for a delicious and easy side dish, give potato salad a try!
