1 cup all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
½ teaspoon salt
1 cup white sugar
1 egg
¼ cup vegetable oil
2 cups peeled and chopped apple
½ cup chopped walnuts
½ cup raisins

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a fluted tube pan (such as Bundt®).

2 large eggs, room temperature
1/2 cup unsweetened applesauce
2 tablespoons canola oil
2 teaspoons vanilla extract

6 cups chopped peeled tart apples
1/2 cup chopped pecans

5 large egg yolks
2 medium tart apples, peeled, cored and halved
1 cup plus 2 tablespoons unsalted butter, softened
1-1/4 cups sugar
2 cups all-purpose flour
2 tablespoons cornstarch
2 teaspoons cream of tartar
1 teaspoon baking powder
1/2 teaspoon salt
1/4 cup 2% milk
Confectioners' sugar

Steps:

  • Preheat oven to 350°. Let egg yolks stand at room temperature for 30 minutes. Starting 1/2 in. from 1 end, cut apple halves lengthwise into 1/4-in. slices, leaving them attached at the top so they fan out slightly. 1 egg

2/3 cup plain yogurt
2 cups all-purpose flour
1 teaspoon baking soda
1/2 cup vegetable oil
3 large eggs

Steps:

  • Preheat the oven to 350°F.
  • Generously grease an 8-inch round cake pan (no need to grease if pan is nonstick).

4 apples
1 teaspoon cinnamon, plus 1 tablespoon cinnamon
1 tablespoon sugar
1/3 cup butter
1/2 cup sugar, plus 1 tablespoon
1 tablespoon brown sugar
1 egg
1/2 cup milk
1 cup flour
1/2 tablespoon baking powder
1 vanilla bean
2 cups milk scalded
6 yolks
1/2 cup sugar

Steps:

  • Peel the apples and cut into thin slices. Toss slices in a bowl with 1 tablespoon of cinnamon and 1 tablespoon of sugar. Melt butter. Brush mold with butter. Cool the remaining butter to room temperature and add 1/2 cup of sugar and brown sugar. Whisk butter and sugars until fluffy. Add egg with milk and whisk. Stir in flour, baking powder and remaining 1 teaspoon cinnamon. Pour into the mold. Put the sliced apples on top and bake in a preheated 350-degree oven for 40 minutes.;

1 cup shortening (I use plain CRISCO)
1/2 cup light brown sugar
1 cup white sugar
2 eggs
2 1/2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cinnamon
1 pinch nutmeg (optional)
1 cup sour milk (I use buttermilk)
2 cups apples, peeled, cored & diced (Cortland or McIntosh)

Steps:

  • Preheat oven to 350°.
  • Lightly grease or spray a 9 X 9 cake pan.
  • In a medium bowl, cream the shortening sugars & eggs together.
  • In another bowl, sift together the dry ingredients.
  • Add to the creamed ingredients, alternately with the sour milk.

A classic one here. A simple, fuss free, easy apple cake. Basically you just need to stir the ingredients together and pop some apples on top. You can dust it with vanilla icing sugar when it has cooled down if you like.

200 g flour
50 g cornflour
2 eggs
the juice and the zest of one organic lemon
2 tsp of raising agent
125 g sugar
120 g butter
a pinch of salt
2 tbsp milk
1 tsp vanilla essence
3 apples
2 tbsp apricot jam
1 tbsp hot water

Steps:

  • Pre-heat the oven at 180 C.
  • In a bowl work the butter to a creamy consistency (an electric mixer would make it easier). Gradually add the sugar, eggs, vanilla essence, salt, juice and zest of the lemon. Incorporate well then add the flour, the cornflour and the raising agent. Stir well and add the milk.
  • You should get a mixture which falls heavily from the spoon, not to runny, not too thick.
  • Pour it all in a round cake tin.
  • Peel and slice the apples into quarters, scrape them with a fork and lay them on the cake.
  • Put the cake on the lower rack of the oven and cook for about 45 minutes.
  • Switch the oven off, take the cake out but leave the oven door shut.
  • Stir the jam with the hot water and when the cake is cooked spread it all over it and put it back into the hot oven for 5-10 minutes.
