GRANDMA'S ORIGINAL POUND CAKE

Grandma's Original Pound Cake image

After resurrecting this recipe when Mom almost lost it, it's a long-time family favorite. Similar to many "old time" recipes but with many fewer eggs and separating and folding in the egg whites to lighten the texture. But this is NOT a dry cake, and so full of flavor it can stand alone on the plate! ENJOY!

Tips for Making Grandma Carter's Pound Cake:

  • Use room temperature ingredients. This will help the cake batter mix together more smoothly and evenly.
  • Cream the butter and sugar together until light and fluffy. This will incorporate air into the batter, making the cake lighter and more tender.
  • Add the eggs one at a time, beating well after each addition. This will help prevent the batter from curdling.
  • Sift the flour and baking powder together before adding them to the batter. This will help ensure that the cake is light and airy.
  • Do not overmix the batter. Overmixing can develop the gluten in the flour, making the cake tough.
  • Bake the cake in a preheated oven. This will help to ensure that the cake bakes evenly.
