GRANDMOTHER'S POUND CAKE

The recipe is from Fannie Farmer Cookbook (1972 edition). It is a buttery dense cake. I have been making it for years. My family loves this cake. My daughter is especially fond of the ends. I have made it to serve plain or as an ice cream cake topped with a frozen fruit mixture. You must use an electric mixer to get the batter light and fluffy.

GRANDMA'S ORIGINAL POUND CAKE

Grandma's Original Pound Cake image

After resurrecting this recipe when Mom almost lost it, it's a long-time family favorite. Similar to many "old time" recipes but with many fewer eggs and separating and folding in the egg whites to lighten the texture. But this is NOT a dry cake, and so full of flavor it can stand alone on the plate! ENJOY!

Tips:

  • Use room temperature ingredients: This helps the ingredients blend together more easily and creates a smoother batter.
  • Cream the butter and sugar together until light and fluffy: This incorporates air into the batter, which makes the cake lighter and more tender.
  • Gradually add the eggs one at a time, beating well after each addition: This prevents the eggs from curdling and helps the batter stay smooth.
  • Sift the flour before measuring it: This aerates the flour and helps prevent the cake from being too dense.
  • Do not overmix the batter: Overmixing can toughen the cake.
  • Bake the cake in a preheated oven: This helps the cake rise evenly.
  • Let the cake cool completely before frosting it: This helps the frosting set properly.
