Time 35m

Yield 3 1/2 dozen

Number Of Ingredients 10

3/4 cup shortening
1 cup sugar
1 egg
1/4 cup molasses
2 cups all-purpose flour
2 teaspoons baking soda
1 1/2 teaspoons ground ginger
1 teaspoon ground cinnamon
1/2 teaspoon salt
additional sugar

Steps:

  • Beat in the egg and molasses.
  • Combine the flour, baking soda, ginger, cinnamon, and salt; gradually add to the creamed mixture.
  • Roll teaspoonfuls of dough into balls.
  • Dip one side of each ball into sugar; place with sugar side up on a greased baking sheet.
  • Bake at 350 degrees for 12-15 minutes or until lightly browned and crinkly.

Tips:

  • To achieve crispy gingersnaps, be sure to chill the dough before baking. This helps prevent the cookies from spreading too much in the oven.
  • If you don't have a cookie sheet with raised sides, line a baking sheet with parchment paper to prevent the cookies from sticking.
  • Make sure your oven is preheated to the correct temperature before baking the cookies. This will help ensure that they bake evenly.
  • Keep an eye on the cookies while they're baking so that you can remove them from the oven as soon as they're done. Overbaking can make them dry and crumbly.
  • Allow the cookies to cool completely on a wire rack before storing them. This will help prevent them from becoming soggy.
