GRANNY'S CHOCOLATE CAKE

Granny's Chocolate Cake image

This cake recipe was adapted from the chef Larry Forgione, who served his grandmother's cake recipe at his restaurant An American Place. The dessert proved so popular that every time he tried to take it off of the menu, he said his customers threatened to riot. It's a perfect proportion of crumb to buttercream, ideal for birthdays or other celebrations where layer cake is required.

Tips:

  • Prepare Ingredients: Before you begin, make sure all your ingredients are measured and ready to go. This will help ensure a smooth and efficient baking process.
  • Soften Butter: It's important to soften the butter before creaming it with the sugar. This will help incorporate air into the mixture, resulting in a lighter and fluffier cake.
  • Cream Together: Creaming the butter and sugar together until light and fluffy helps create a smooth, even batter. Make sure you cream them together for at least 2-3 minutes.
  • Add Eggs One at a Time: When adding the eggs, do it one at a time, beating well after each addition. This helps prevent the batter from curdling.
  • Fold in Dry Ingredients: Gently fold the dry ingredients into the wet ingredients using a spatula. Over-mixing can toughen the cake, so mix only until the ingredients are combined.
  • Use Ripe Cherries: Using ripe, fresh cherries will give your cake the best flavor. If using frozen cherries, thaw them completely before adding them to the batter.
  • Bake at Proper Temperature: The cake should be baked at 350°F (175°C) for about 40-50 minutes. Check the doneness of the cake by inserting a toothpick into the center; if it comes out clean, the cake is done.
  • Cool Completely: Allow the cake to cool completely before frosting it. This will help the cake set and make it easier to frost.
  • Frost with Chocolate Ganache: Chocolate ganache is a rich and decadent frosting that pairs perfectly with this cake. To make the ganache, heat heavy cream and butter in a saucepan until the butter melts. Remove from heat and stir in chocolate chips until melted and smooth.

Conclusion:

With its moist texture, rich chocolate flavor, and sweet cherries, this Granny's Chocolate Cherry Cake is a delectable treat that will satisfy your sweet tooth. The combination of chocolate and cherries creates a classic flavor combination that is sure to please everyone. Whether you're serving it for a special occasion or just as a weekend dessert, this cake is sure to be a hit. So, gather your ingredients, preheat your oven, and get ready to bake this delicious masterpiece!
