1 cup unsalted canned chickpeas (drained and rinsed)

2 cups fresh baby spinach (leaves torn)
1/2 teaspoon red pepper flakes
kosher salt (to taste)
1/4 cup crumbled feta cheese
kalamata olives (for garnish)
1/4 cup olive oil

1 clove garlic (minced)
juice of 1 lemon

1 large spaghetti squash (about 4 pounds)
2 tablespoons olive oil
1 teaspoon minced garlic
1 pound peeled and cleaned extra-large shrimp
1/2 cup chopped onion
Kosher salt and freshly ground black pepper
2 cups diced tomatoes
1/2 cup roughly chopped kalamata olives
2 tablespoons chopped fresh oregano leaves
1 cup crumbled feta

Steps:

  • Preheat the oven to 400 degrees F.
  • Cut the spaghetti squash in half and scrape out the seeds with a spoon. Place the halves cut-side down on a rimmed baking sheet and roast until the halves look somewhat wrinkly and collapsed, about 50 minutes. Remove from the oven and allow to cool for 15 minutes.
  • Use a fork to scrape the inside of the squash to form spaghetti-like strands and transfer to a large serving bowl.
  • Heat the oil over medium heat in a very large, deep skillet (or even a large Dutch oven or pot). Add the garlic and saute until just golden, about 30 seconds. Add the shrimp and onion, season with salt and pepper and saute until the shrimp are pink and almost cooked through, about 4 minutes. 1 cup sugar
1 cup diced celery
