GREEN BEAN, HAZELNUT, AND MINT SALAD WITH LEMON DRESSING
This is a recipe I found in a Sunset Magazine. With its pesto-like flavorings and bright lemon dressing this is a great way to serve green beans. ***Note*** Make this about 3 hours ahead to allow the flavors blend.

Tips:
- To save time, buy pre-trimmed green beans. If you're trimming them yourself, snap off the ends and remove any strings.
- Don't overcook the green beans. They should be tender but still have a bit of a crunch.
- Use a variety of greens in your salad. Arugula, spinach, and mixed greens all work well.
- Toast the hazelnuts before adding them to the salad. This will bring out their flavor.
- Use a good quality balsamic vinegar. It will make a big difference in the flavor of the dressing.
- If you don't have any fresh herbs on hand, you can use dried herbs instead. Just use about half the amount.
Conclusion:
This green bean and hazelnut salad is a delicious and healthy side dish that's perfect for any occasion. It's easy to make and can be tailored to your taste preferences. For a more substantial salad, add some grilled chicken or shrimp. For a lighter salad, omit the cheese. No matter how you make it, this salad is sure to be a hit.
