Yield Makes about 6 cups

Number Of Ingredients 9

1/4 cup cider vinegar
1 tablespoon sugar
1 teaspoon salt
1 1/2 tablespoons olive oil
3/4 teaspoon caraway seeds, coarsely crushed
1/4 teaspoon black pepper
1 pound red cabbage, cored and thinly sliced (4 cups)

  • If you don't have a mandoline, you can use a food processor fitted with the shredding blade.
  • Add other vegetables to the slaw, such as carrots, celery, and bell peppers.
  • Use a variety of herbs and spices to flavor the dressing, such as dill, parsley, cumin, and paprika.
  • Let the slaw sit for at least 30 minutes before serving so that the flavors can develop.
  • Serve the slaw as a side dish or topping for tacos, sandwiches, and wraps.
