1 small baguette, sliced into 1/2-inch-thick slices (about 30 slices)
1/4 cup plus 3 tablespoons olive oil
Kosher salt and freshly ground black pepper
2 cloves garlic, 1 left whole and 1 minced
1/4 teaspoon crushed red pepper flakes
1 teaspoon fresh thyme leaves
1 cup green seedless grapes, sliced in half
1/2 cup pitted kalamata olives, sliced in half
One 8-ounce log goat cheese, at room temperature

Steps:

  • Preheat oven to 425 degrees F and line a sheet tray with a wire rack.
  • Place the baguette slices on the rack. Brush both side of the slices with 1/4 cup olive oil and sprinkle with salt and pepper. Toast in the oven until light brown and crispy, about 6 minutes. Let cool, then rub each slice with the whole clove of garlic.
  • Heat the remaining 3 tablespoons olive oil in a large fry pan over medium heat. Add minced garlic, crushed red pepper and thyme and cook for 1 minute. Add grapes and olives and cook, stirring, until heated through and grapes begin to soften, 3 to 4 minutes.

Goat Cheese Crostini - Giada image

I first made this for a Valentine's dinner with DH. We really loved it. I used a skinny whole-wheat baguette, so the slices were small two- or three-bite ones. and I left out the sliced chives. Yumm. from "Everyday Italian" on Food Network.

Tips:

  • Choose ripe, flavorful olives. Look for olives that are plump and have a deep green color. Avoid olives that are shriveled or have any blemishes.
  • Use a good quality goat cheese. A fresh, creamy goat cheese will make all the difference in this recipe. Look for goat cheese that is made with whole milk and has a slightly tangy flavor.
  • Toast the baguette slices until they are golden brown and crispy. This will help them to hold up to the toppings and prevent them from getting soggy.
  • Spread the goat cheese on the crostini while it is still warm. This will help the cheese to melt slightly and become easier to spread.
  • Top the crostini with the olives, tomatoes, and herbs. Be generous with the toppings so that each bite is full of flavor.
  • Drizzle the crostini with olive oil and balsamic vinegar. This will add a delicious finishing touch to the crostini.
  • Serve the crostini immediately. These are best enjoyed while they are still warm and crispy.

Conclusion:

Green olive and goat cheese crostini are a delicious and easy-to-make appetizer that is perfect for any occasion. They are made with just a few simple ingredients and can be assembled in minutes. These crostini are also a great way to use up any leftover olives or goat cheese. So next time you are looking for a quick and tasty snack, give these crostini a try!
