2 green bell peppers, seeded and cut into 1 1/2-inch dice
3 vine-ripe tomatoes, seeded and diced
1 small onion, chopped
1 large clove garlic, finely chopped
1/2 cup flat-leaf parsley leaves, coarsely chopped
1/2 lemon, juiced (1 tablespoon)
1 tablespoon red wine vinegar
3 tablespoons extra-virgin olive oil
Coarse salt and black pepper
1 teaspoon ground cumin, 1/2 a palm full

Steps:

  • Combine peppers, tomatoes, onions, garlic, parsley in a bowl with your fingertips. Squeeze the juice of the lemon with the lemon half sitting upright. This will help prevent the seeds from falling into the bowl. The lemon juice will spill down over the sides of the lemon and the seeds will remain with the fruit. Squeeze the juice evenly over the salad. If the lemon is under-ripe, microwave it for 10 seconds before you cut into it. Next, sprinkle a tablespoon of vinegar over the salad -- just eyeball it. Drizzle the extra-virgin olive oil over the salad, add the salt, pepper and cumin. Toss again. Taste to adjust seasonings and serve.

4 cucumbers
1 sweet onion
3 tomatoes
1/4 green bell pepper
2 tablespoons white vinegar
2 tablespoons vegetable oil
salt, as needed
ground black pepper, as needed
water, as needed

Steps:

  • Peel the cucumbers, slit in half lengthwise and remove any large seeds and then thinly slice.
  • Thinly slice the onion into half rounds.
  • Dice your tomatoes (make sure that they are very ripe and full of flavor).
  • Sliver the green bell pepper.
  • Put the vegetables into a large serving dish/bowl. Sometimes I'll add extra cucumbers to the mixture, depending on their size.
  • Add 2-3 Table. white vinegar, as desired.
  • Add 2-3 Table. vegetable oil, as desired.
  • Fill the bowl with water.
  • Generously sprinkle with ground black pepper and especially salt. Taste to make sure that the water has a good flavor and that there is enough salt.
  • Chill for a good 4 hours. Serve in small bowls or ramekins. The water that you serve with this salad is especially refreshing.
  • Cooking time is the minimum chilling time.

1 medium-size sweet red bell pepper
1/2 cup finely chopped red onion
2 teaspoons Dijon mustard
1 tablespoon red-wine vinegar
1/4 teaspoon ground cumin
Salt and freshly ground pepper to taste
1/3 cup olive or vegetable oil

Steps:

  • Trim the ends off the beans. Remove the strings if any.
  • Bring to a boil enough water to cover the beans. Add the beans and, when the water returns to a boil, cook until tender, about 8 minutes. Do not overcook. Drain well and put them in a salad bowl.
  • Preheat broiler.
  • Place the pepper under the broiler, and cook it on all sides until the entire skin is well charred. When cool enough to handle, split it in half. Remove and discard the seeds and veins. salt, to taste

2 1/2 cups cooked green beans, quartered (or frozen green beans)
2 medium red bell peppers, seeded, membranes removed, and diced
2 -3 green onions, white and green parts, sliced
1 serrano chili, seeded if desired and minced (can use pickled serrano if you wish)
1 head iceberg lettuce, coarsely shredded (or any crisp similar textured lettuce such as Romaine)
1/2 cup Spanish olives with pimento, sliced
1/4 cup red onion, sliced into crescents

Steps:

  • Prepare the salad dressing by combining the red wine vinegar with the salt and pepper. Gradually whisk in the olive oil. Best prepared 2-3 hours in advance to allow the ingredients to marinate.
  • Cook the green beans until tender crisp and green beans are still brightly colored. To halt cooking, rinse and drain immediately under cold water. Set aside.

¼ cup finely chopped green pepper
3 tablespoons chopped hot green chile peppers
2 tablespoons white vinegar
1 teaspoon white sugar

  • Cut off about 1/2 inch of the corn stalk using a large, sharp knife. Do not shuck the corn.

1 tablespoon Dijon-style mustard
1 tablespoon red-wine vinegar
4 tablespoons olive oil
1/4 teaspoon ground cumin
Freshly ground pepper to taste
1/2 cup finely chopped red onion
2 tablespoons chopped parsley

Steps:

  • Preheat the oven broiler.
  • Place the pepper under the broiler and cook on all sides until the skin is well charred. Remove from the oven. When cool enough to handle split the pepper in half, core it and discard the skin. Pat the pepper dry on paper towels. Cut the pepper lengthwise into thin strips. Set aside.
  • Trim or break off the ends of the beans. Remove the strings, if any. Bring enough water to a boil to cover the beans when added. Add salt and the beans. Bring to a boil and simmer for 4 to 8 minutes or until tender. Drain well.
