While it may seem unusual to use unripe tomatoes, they add a unique tartness and tanginess to the pie. This dish is a versatile one, allowing for creativity and variation, with some recipes calling for a mixture of green and red tomatoes, while others incorporate additional flavors like bacon, cheese, or spices. When frost nips our garden, I quickly gather all the green tomatoes still on the vine and make this old family favorite. It's been handed down from my grandmother, and now my granddaughters are asking for the recipe.-Violet Thompson, Port Ludlow, Washington

GREEN TOMATO MOCK MINCEMEAT PIE
This recipe is 'The Holidays' for me. I remember the smell filling the house 60 years ago when my mom was cooking it. At the end of the tomato season, when the remaining tomatoes in the garden will not ripen, this is a great use for them. A note from my mother: I put a heaping teaspoon of tapioca on the bottom crust before I fill it. It will absorb some of the liquid.

Steps:
- In medium bowl, mix 2 2/3 cups flour and 1 teaspoon salt. Cut in shortening, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until particles are size of small peas. Sprinkle with cold water, 1 tablespoon at a time, tossing with fork until all flour is moistened and pastry almost cleans side of bowl (1 to 2 teaspoons more water can be added if necessary).
- Gather pastry into a ball. Divide in half and shape into 2 flattened rounds on lightly floured surface. Wrap in plastic wrap; refrigerate about 45 minutes or until dough is firm and cold, yet pliable. This allows the shortening to become slightly firm, which helps make the baked pastry more flaky. If refrigerated longer, let pastry soften slightly before rolling.
- Heat oven to 425°F. With floured rolling pin, roll one pastry round into round 2 inches larger than upside-down 10-inch glass pie plate. Fold pastry into fourths; place in pie plate. Unfold and ease into plate, pressing firmly against bottom and side.
- In large bowl, mix sugar, 1/4 cup plus 3 tablespoons flour, the nutmeg and 1 teaspoon salt. Add tomatoes, lemon peel and lemon juice; toss to coat. Turn into pastry-lined pie plate. Cut butter into small pieces; sprinkle over tomatoes. Trim overhanging edge of pastry 1/2 inch from rim of plate.
- Roll other round of pastry. Fold into fourths and cut slits so steam can escape. Unfold top pastry over filling; trim overhanging edge 1 inch from rim of plate. Fold and roll top edge under lower edge, pressing on rim to seal; flute as desired. Cover edge with 2- to 3-inch strip of foil to prevent excessive browning.
- Bake 35 to 45 minutes or until crust is brown and juice begins to bubble through slits in crust, removing foil for last 15 minutes of baking. Serve warm.

FRIED GREEN TOMATO PIE
The other day I was working in my garden and I starting picking green tomatoes so that I could fry them. GREEN TOMATO PIE
Found some green tomatoes at a local farmers market and came home to figure out what to use them in...found a recipe for Green Tomato Pie. I have never heard of it but thought Why Not. Played a little with the recipe and it turned out fantastic! Not at all what I expected, a very nice surprise!

Steps:
- 1. Wash the green tomatoes well, slice thinly and cut slices into quarters. Some say to peel the tomatoes, I see no need for it, your choice.
- 2. Mix the sugar and cornstarch in a small bowl, set aside. Preheat your oven to 425 degrees.
- 3. In a medium saucepan, combine the tomatoes with the lemon juice, lemon zest, salt and cinnamon. Cook the mixture over low heat, stirring frequently. When mixture seems softened (10-12 minutes), add the sugar/cornstarch mixture and continue to cook...stirring constantly. Make sure the cornstarch is dissolved in and not lumps in the mix. Add the butter, stir and remove from heat. Let stand while you prepare the pastry. Use your favorite recipe or store bought if that is what you prefer. I make my crust ahead of time and freeze the balls, then take them out as needed, defrost on the counter and roll out. I will add my pie crust recipe soon, it is the flakiest I have even seen.
- 4. Line a 9 inch pie plate with the bottom pastry, pour in the tomato mixture. At this point you can dot the top with butter if you wish or just cover with the top crust. I do the butter, but that is just how I was taught. Seal the edges of the pastry together, crimp and then cut several small slits in the top crust to allow steam to escape.
- 5. Again at this point, you can put into the oven or add one extra step I always use on my pies. I moisten my fingers with milk and gently rub the top crust until its moistened, but not pools of milk on top. Then sprinkle on some sugar, 1T should be enough. This adds to the browning and also makes a more flavorful, shiny crust. Its up to you if you want to add this step.
- 6. Bake for 35-45 minutes, the pie should be golden brown. This can be served hot or cold, we preferred cold with a touch of homemade whip cream.

GREEN TOMATO PIE
Steps:
- Mix 3/4 cup sugar, 1/2 teaspoon cinnamon, 1/8 teaspoon nutmeg, 1/4 teaspoon each salt and pepper, 3 tablespoons quick-cooking tapioca and the zest of 1 lemon. Cut 2 pounds green tomatoes into 1/4-inch-thick slices; dip completely in the sugar mixture, then arrange in pie shell, adding 1/2 cup golden raisins as you layer. Drizzle with 2 tablespoons lemon juice and dot with 4 tablespoons butter.
- Perfect All-Butter Piecrust
- Pulse 3 1/2 cups flour, 1/4 cup sugar and 1 teaspoon salt in a food processor. Add 1 diced stick cold butter; process until combined. Add 2 more diced sticks cold butter; pulse three times, or until the mixture resembles coarse meal. Add 1 tablespoon white or cider vinegar. Gradually pour in 1/3 cup ice water, pulsing about four times until combined. Turn out onto a clean surface and press into a cohesive dough without overworking (you should see bits of butter). Wrap in plastic wrap and press into a 1-inch-thick disk; refrigerate at least 1 hour before rolling out.
- How to Make a Pie
- Divide the chilled dough in half; roll 1 piece into a 12-inch, 1/8-inch-thick circle on a lightly floured surface (refrigerate the other piece).
- Roll the dough onto a rolling pin, then unroll it into a 9-inch glass pie plate, letting it hang over the edge; add filling.
- Roll out the other piece of dough and place over the filling; press the crust edges together and trim, leaving a 1-inch overhang. Roll up or pinch the overhang to seal.
- Place a foil-lined baking sheet on a rack in the lower third of the oven; preheat to 450 degrees. Wrap an oiled, wide band of foil around the pie edge to protect the crust. Make slashes in the top of the crust; chill for 30 minutes.
- Reduce the oven to 400 degrees. Bake the pie for 30 minutes. Remove the foil band, brush the crust with heavy cream and sprinkle with sugar. Bake until golden brown, about 30 minutes; cool before slicing.
Tips:
- Choose firm, green tomatoes for your pie. Using overripe tomatoes will make the finished pie mushy.
- Slice tomatoes thinly and evenly so that they cook evenly. Use a mandoline for the most consistently sized slices.
- Use a variety of cheeses in your pie. Cheddar, mozzarella, and Parmesan are all good choices. You can also add in some crumbled bacon, cooked sausage, or chopped vegetables.
- Season your tomato mixture well with salt, pepper, and garlic powder. You can also add in some fresh herbs, such as basil or oregano.
- Bake your pie until the crust is golden brown and the filling is bubbly. The exact baking time will depend on the thickness of your pie.
- Let the pie cool slightly before serving. This will help the filling to set and make it easier to slice.
Conclusion:
Green tomato pie is a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner. It's also a great way to make your tomatoes last when your garden has an abundance! With so many different variations available, you're sure to find a green tomato pie recipe that you love. So next time you have a bunch of green tomatoes on hand, give one of these recipes a try.
