Yield Makes 8 to 10 pieces

Number Of Ingredients 6

2 teaspoons dry active yeast
1 1/4 cups warm water
3 cups bread flour, plus more for work surface
1 tablespoon sugar
1 teaspoon salt
2 tablespoons olive oil, plus more for bowl and griddle

Steps:

  • In a large bowl, mix together yeast and 3/4 cup water; let stand 5 minutes. Add remaining 1/2 cup water, flour, sugar, salt, and olive oil; mix until a dough is formed. Turn dough out onto a lightly floured work surface and knead until firm, about 5 minutes.
  • Lightly oil a large bowl and add dough. Cover with plastic wrap and keep in a warm place; let rise until dough has doubled in size, about 2 hours.
  • Divide dough into 8 to 10 two-ounce pieces. Roll each piece of dough out to an 1/8-inch-thick circle; cover dough with a clean towel. Heat griddle over high heat and lightly coat with olive oil. Working with one piece of dough at a time, uncover and add to griddle. Cook flatbread until bubbling and brown, 40 seconds to 1 minute, then turn and continue cooking 20 seconds more. Remove flatbread from heat; wipe griddle clean. Repeat process with remaining pieces of dough.

Tips:

  • Choose the right vegetables: Not all vegetables are created equal when it comes to grilling. Some, like zucchini, eggplant, and bell peppers, hold up well to high heat and can be grilled directly over the flames. Others, like tomatoes and mushrooms, are more delicate and should be grilled over indirect heat or in a grill basket.
  • Prepare your vegetables properly: Before grilling, wash your vegetables thoroughly and pat them dry. You can also slice or dice them into uniform pieces to ensure even cooking.
  • Use a good quality olive oil: Olive oil is a great choice for grilling vegetables because it has a high smoke point and won't burn easily. You can also use avocado oil or grapeseed oil.
  • Season your vegetables: Before grilling, season your vegetables with salt, pepper, and any other desired seasonings. You can also use a marinade or glaze to add extra flavor.
  • Grill your vegetables over high heat: The key to perfectly grilled vegetables is to cook them over high heat. This will help them to caramelize and develop a nice smoky flavor.
  • Don't overcrowd the grill: When grilling vegetables, it's important to not overcrowd the grill. This will prevent them from cooking evenly and will make them more likely to stick.

Conclusion:

Grilled autumn vegetables are a delicious and healthy way to enjoy the flavors of the season. With a little planning and preparation, you can easily create a delicious grilled vegetable dish that will be the star of your next meal. So fire up the grill and get grilling!
