1 eggplant, sliced
Kosher salt and freshly ground black pepper
1 loaf sliced Italian bread
1/4 cup extra-virgin olive oil
Nonstick cooking spray, for the baking sheet
1 pint multicolor grape tomatoes
2 tablespoons balsamic vinegar
1 teaspoon honey
3 cloves garlic, halved
1/4 cup fresh basil leaves, chopped, plus more for garnish
One 15-ounce carton ricotta

Steps:

  • Place the eggplant in a colander. Sprinkle generously with salt and let stand 30 minutes. (This removes the excess water from the eggplant.) Rinse the eggplant and arrange in a single layer on a paper towel-lined baking sheet. Pat dry. Heat a grill pan or outdoor grill to medium-high heat (see Cook's Note).
  • Preheat the oven to 450 degrees F. Brush the eggplant and bread slices with 3 tablespoons olive oil. Sprinkle the eggplant with salt and pepper.
  • Line a small rimmed baking sheet with heavy-duty aluminum foil and coat with nonstick cooking spray. Toss the grape tomatoes, vinegar, honey and the remaining tablespoon olive oil on the foil. Bake the tomatoes until they burst, about 6 minutes.
  • Meanwhile, grill the eggplant until browned and tender, 3 to 4 minutes on each side. Grill the bread until toasted and grill marks appear, 1 minute on each side. Rub the cut sides of the garlic on the bread. Set aside.
  • Transfer the tomatoes to a medium bowl. Coarsely chop the eggplant and add to the tomatoes. Add the chopped basil, then season with salt and pepper.
  • Spoon the ricotta onto the grilled bread. Top with the eggplant mixture and garnish with additional basil. Cut the bread in half, if desired.

2 large Italian eggplants
Good-quality olive oil
1/2 pound fresh whole-milk mozzarella
3 large ripe tomatoes, red or yellow or a combination of both
1 bunch fresh basil

Steps:

  • Prepare a barbecue (or preheat a broiler). Cut the eggplants into slices about 1/2-inch thick. Spread on a baking sheet and brush with olive oil on both sides. Set aside.
  • Cut mozzarella in half crosswise, then slice each half about 1/4-inch thick to create half-moon shaped pieces. Slice tomatoes in the same manner. Arrange tomatoes and mozzarella decoratively around the edge of a large serving platter.
  • Place eggplant slices on barbecue (or place on baking sheet in broiler) and cook, turning once, until nicely charred on each side; the eggplant should almost caramelize. Arrange the cooked eggplant down the center of the serving platter, surrounded by the tomatoes and mozzarella. Pluck about 12 large leaves from the basil bunch, stack them, roll them up like a cigar, then slice crosswise into thin shreds (?chiffonade?). Scatter the basil shreds over the vegetables and cheese, then drizzle balsamic vinegar and more olive oil over all. Sprinkle with salt and pepper, to taste, and let stand until eggplant is at room temperature.

1/4 teaspoon crushed red pepper flakes
1 large eggplant (about 1 pound), cut into 3/4" pieces

1 tablespoon fresh lemon juice
8 3/4"-thick slices country-style bread
1/2 cup torn fresh basil leaves
1 ounce Parmesan, shaved

Steps:

  • Heat 4 tablespoons oil in a large skillet over medium heat. Add garlic, marjoram, and red pepper flakes and cook, stirring often, until garlic is softened but not browned, about 2 minutes.

2 1/2 lbs small eggplants, cut lengthwise into 1/4-inch slices
coarse salt
fresh ground black pepper
1 cup extra virgin olive oil
2 teaspoons fresh thyme, chopped
1 cup balsamic vinegar
vegetable oil, for grill
1 baguette, halved lengthwise
6 ounces feta cheese
fresh basil, torn

Steps:

  • Sprinkle eggplant slices with 2 t salt, place in colander and let stand 30 minutes. Wipe off salt and moisture with paper towels.
  • Mix olive oil, thyme, 2 t salt and 1/2 t pepper in a medium bowl. Reserve 1 T oil mixture.
  • Place vinegar in a small saucepan over high heat. Cook until reduced by half, 8-10 minutes. Remove from heat, stir in reserved 1 T oil mixture & let cool.

1/2 cup plus 2 tablespoons extra-virgin olive oil
1 tablespoon white-wine vinegar
1/2 teaspoon black pepper
3/4 teaspoons salt
1 (8-oz) piece smoked cheese such as Gouda, mozzarella, or scamorza
4 (3/4-inch-thick) slices country-style bread (from an 8-inch round loaf)
2 (1-lb) eggplants

Steps:

  • Prepare grill for cooking over direct heat with medium-hot charcoal (moderate heat for gas); see Grilling Procedureepi:recipelink.

1 large eggplant, sliced into 16 1/4-inch rounds
8 slices gouda cheese (thin slices) or 8 slices other cheese (thin slices)
2 thinly-sliced tomatoes or 4 large roasted red peppers
8 -16 leaves fresh basil
fresh ground pepper
2 tablespoons extra virgin olive oil
2 teaspoons wine vinegar or 2 teaspoons balsamic vinegar
1 teaspoon dijon-style mustard
sea salt
freshly-ground pepper, to taste

Steps:

  • Whisk all seasoning oil ingredients in a small bowl.
  • Brush eggplant slices with seasoning oil and place over medium-high heat on grill. Close lid and cook until tender, turning and brushing with remaining seasoning oil, about 5 to 10 minutes.
