4 boneless, skinless chicken breasts, pounded thin
Olive oil
Salt and freshly ground black pepper
1/2 pound triple creme cheese (recommended; Red Hawk) or brie, thinly sliced
2 lemons, halved
8 paper thin slices prosciutto
1/4 pound baby arugula

Steps:

  • Heat the grill to high.
  • Brush the chicken on both sides with oil and season with salt and pepper, to taste. Grill until slightly charred on both sides and just cooked through, about 2 minutes per side. Put a few slices of cheese on each breast, close the cover and let it melt slightly, about 40 seconds. Brush the cut side of lemons with oil and grill, cut side down until golden brown and slightly charred, about 45 seconds.

1/4 cup extra-virgin olive oil
1 clove garlic, chopped
1/2 shallot, chopped
Grated zest and juice of 1/2 lemon
Kosher salt
1 1/2 pounds medium summer squash, such as yellow pattypan, cousa or zucchini, cut into 1-inch chunks
4 skinless, boneless chicken breasts (6 to 8 ounces each)
Freshly ground pepper
4 thin slices Swiss cheese
4 thin slices deli ham
2 cups spring mix salad blend (about 2 ounces)

Steps:

  • Preheat a grill to medium. Combine the parsley, 3 tablespoons olive oil, 1 tablespoon water, the garlic, shallot, lemon zest and juice, and 1/2 teaspoon salt in a mini food processor and puree.

1/8 tsp salt
1/4 tsp freshly ground pepper
2 tsp Dijon style mustard, with seeds
1/4 lb prosciutto (4 slices)
2 oz Swiss cheese (4 slices)
